Shrimp and Asparagus

My hubby is pretty picky especially when it comes to pastas...but he loved this! He doesn't like mushrooms, but I put them in anyway just for my bowl...I used penne and also wilted some spinach into the veg/shrimp mixture before tossing in the pasta and that made it even better!!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I made these for a friend's birthday this past weekend and they came out pretty good. The first batch I'm pretty sure I filled too full so they were sort of flat instead of puffed on top..so just be careful to leave enough room for the cookie ball. I also used some of the cookie mixture and made tiny cookies to top them with later! Tasted one pretty soon after they came out of the oven to make sure it was right before the second batch went in the oven and it was delish warm....I ended up putting the finished cupcakes in the fridge for a couple hours before serving and it did change the texture of the cookie inside but they were still good!

Chocolate-Covered OREO Cookie Cake

I used this more for the filling than the cake as a whole...but boy was it good!! I spread it between two devils food cakes and instead of the chcolate on top I covered the whole thing in buttercream to be able to decorate it for my son's birthday and it was a hit...much like the Oreo cake you can get @ Albertsons.

Was disappointed with this...it tasted great, but was very difficult to work with, it kept 'melting'...my cake turned out alright but I will be looking for something different next time.

Tiramisu Cheesecake

I LOVE this recipe! I get so many compliments on it everytime...they always think I bought it instead!! I have done it differently from the recipe each time though...as per others suggestions add more liquer and also I have added some espresso for a better coffee flavor. The first time I spent the extra $ on the ladyfingers and marscapone and it was good...the second time I just used the cream cheese mixed with some cream (instead of marscapone) and nilla wafers instead of ladyfingers as well as toped it with some chocolate ganache and I will say save the money and do it the cheap way it tasted much better!

Royal Icing III

I made this for some gingerbread men at Christmastime & it worked well...I do think I needed a bit more powder sugar to make it the consistency I wanted but it was still great...just keep mixing until it's the right thickness for you

Herbed Greek Roasted Potatoes with Feta Cheese

Wow.....they smelled so amazing while cooking made me hungry for the last 2 hours! Had to skip the mint because hubby doesn't like it...also had no feta on hand but it would be so good with it, will get some for next time!! YUM!

Really good hubby loves it with a little extra sugar...you can totally skip the buttermilk as it can be expensive most of the time & if you are short on time you can pop it in the freezer to set for 30 mins or less and it's like it was chilled for an hour or two.

True-Blue Potato Salad

My husband is picky about his potato salad, but I made this for Christmas Day lunch and he asks me to make it all the time now. I skipped the celery seed and blue cheese and also added some crumbled bacon and mustard, and it came out awesome

YUM YUM YUM! This was so good! Will make this again for sure. My husband wasn't too fond of the actual sun-dried tomatoes, but I like it that way, so think I will just leave them off his plate next time!

Easy Meatloaf

My picky hispanic hunsband who had never had meatloaf before and was wary to try it LOVED this! If he likes it you know its a good recipe. i pretty much followed the recipe as is, but might add a few things next time.

Ginger Veggie Stir-Fry

This was a good starter recipe, but I did change a few things. I didn't have cornstarch so omitted it, used different veggies because it was what I had on hand (used brocoli, carrots, bean sprouts, mushrooms, zuchinni, and chinese cabbage) I also added some extra ginger and garlic as well as red pepper flakes, then served over couscous. It ended up very similar to a dish my mom used to make that I LOVED so this was really good!
