Creamy Rice Pudding

I'm not a lover of rice pudding but this version has totally swayed me. My mom requested this when she was ill and I wanted to make a better version then the one she always tried to feed me (Betty Crocker I think). So recipe hunting I went and I actually really like this one. I used sushi rice to increase starchy creaminess, but rinsed it after it was cooked so it wasn't a pile of mush. Used whole milk, bourbon vanilla, and Demerara sugar- tastes amazing!!

Raspberry and Almond Shortbread Thumbprints

Amazing! Did not make with glaze, and switched raspberry for blackberry. A yummy plain shortbread standby with a jammy center- Delish!

Pecan Breaded Chicken Breasts

This was really easy to scale down to one serving. I had some frozen raw shelled pecans from a farmer's market trip and I think using them raw is what made it crisp up so well without even slightly burning. I served it up with some of my mom's squash caserole and canned italian green beens. All together took me about 20 minutes total from prep to plate. Very yummy!

I only made half a batch since I only had one madeleine pan (12 cookies), but they turned out perfectly. Strawberry season just started and the lemon zest in these cookies went perfectly with the strawberries. Thanks so much for posting this recipe!

Old Fashioned Coconut Cream Pie

This is the best Coconut Cream pie I've ever had, most of the others I've tried use cornstarch, but the flour and tons of half & half make this the richest & creamiest ever.
