Butternut and Apple Harvest Soup

So good. Didn't add the wine though, just added more stock. Next time i may try adding apple juice to substitute the wine.

Downeast Maine Pumpkin Bread

Not being a big pumpkin fan, i still decided to try this recipe due to it's great reviews. Very good... Did add 1tsp of vanilla and substituted the water for buttermilk. Will be making this cake often :) Thank you for sharing.

Super Moist Pumpkin Bread

Balsamic-Glazed Salmon Fillets

When reducing the balsamic vinegar , it did give out a strong smell. Didn't have a bottle of white wine open so substituted for beer, also didn't use the oregano and it turned out delicious.

Good Old Fashioned Pancakes

These pancakes are awsome!!!! I did add 1 tsp of vanilla and substituted half cup of flour for whole wheat flour. Made about 7 (half cup) fluffy pancakes :)

Roast Sticky Chicken-Rotisserie Style

Very good... I did cut the recipe in half,except for the garlic powder. I brushed the chicken with butter before rubbing in the spices. It roasted for four and a half hours at 250, and it turned out juicy on the inside and crispy on the outside. I made a rice using some of the sauce left on the roasting pan (sauteed 2 shallots with a bit of olive oil. Add rice and a bit of roasted chicken sauce, fry for a bit then add chicken stock, salt and pepper,cook until rice is cooked. It actually turned out very tasty.

Baked Pork Chops I

Cut the recipe to 2 pork chops but used a whole can of cream of mushroom. Meat was so tender that we almost didn't need a knife. The only thing that lacked for my taste , was the gravy. Next time i'll try it with the onions and mushrooms or make my own cream of mushroom soup...

Teriyaki Flank Steak

Very tasty. I let it marinate for 48hrs. I seared it first then baked it. It turned out great, but i definitely want to try it on the bbq.

Easter Eggs

These are delicious! I thought they would be too sweet but they were just right. I did half the recipe and replaced the margarine for unsalted butter. The recipe just calls for shredded coconut, i used the unsweetened kind. The peanut butter ones were very good, but the coconut were my favorite, they tasted like bounty bars (even better) As for the chocolate, i used the melting chocolate wafers available in the bulk sections at the grocery store, they turn crispy hard in minutes. When dipping it can become quite the task; i found the pb ones to be the most difficult even though they were frozen. I placed the candy on a fork and with a spoon poured the melted chocolate over them.

Too Much Chocolate Cake

I make this cake on a regular basis at the restaurant i work for. I sometimes substitute the sour cream for buttermilk and it still turns out fabulous. And of course, can't have chocolate cake without the chocolate frosting. It is a favorite in my recipe collection.

These were absolutely delicious! I did have to bake theme longer than what is suggested in the recipe; but then again i used an 8x11 pan instead of the 9x13, so they were taller squares and made the removal from the pan a little difficult (they're very tender). I will try the mini muffin pan next time. I used a mixture of semi sweet and milk chocolate chunks. Thanks for the great recipe!

Pumpkin Chocolate Chip Cookies III

It's a very cakey cookie, like some have mentioned "muffin tops" but tasty.I did add 1 tsp nutmeg,half tsp ginger and 2 tblp molasses. I don't know if it was the extra moisture from the molasses, but i did have to add a third of a cup more flour.

ABC (Absolute Best Chewy) Chocolate Chippers

Love this cookie! I try alot of chocolate chip cookie recipes, and by far this one is a favorite at the moment ;) Here's a tip i got from Ana Olson; substitute 2 tablespoons of flour for cornstarch, it's suppose to make them chewier
