Real Wisconsin Fried Cheese Curds

Are you kidding me??? These we SOOOOOOO good--just like at the fair. The trick is to find cheese curds--not so easy in my area. Not so healthy, but when something tastes this good, who cares?

Best Ever Chuck Wagon Chili

Loved it. Like others, I skipped the habanero and used one can of Rotel tomatoes, then made up the difference with tomato sauce. Topped with shredded cheddar. Good, hearty meal.

Vegetarian Tortilla Stew

Fantastic! I loved that it was hearty, healthy, tasty and EASY. I made a few minor modifications (chicken broth, extra tomatoes, crispy tortilla strips) but otherwise followed the recipe exactly. Served with popovers and green salad. I will make this easy meal again and again.

Reuben Casserole

We love this and have made several times. I put the meat on the bottom, then sauerkraut, 1,000-island dressing, and top with bread cubes lightly tossed with melted butter. I bake for about 15 minutes until the bread gets crispy, then add grated swiss and bake until the cheese melts. I usually end by broiling the cheese for a minute or two. Yummy.

Easy Morning Glory Muffins

SOOO good! I threw the carrots (maybe 6?) and apple in my food processor to grate--it made this recipe so easy. As others recommended, I used a combo of apple sauce and crushed pineapple to fill a cup most of the way and topped it off with a little bit (maybe 1/8 c.) of canola oil. The muffins were very moist--definitely a keeper.

Baked Teriyaki Chicken

Fantastic. Better than any other I've had. The only change I made was to do half white/half brown sugar--perfect sweetness. I made three chicken breasts--if you make more than that, double the sauce. UPDATE--the teriyaki sauce is so darn good we also use it for stir-fry--brown rice and whatever vegetables we have on hand. EXCELLENT RECIPE!!!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I would give this a 4.5. Interesting, easy change for pork chops. Definitely don't skip the feta--it balances the tomatoes/onions perfectly.

Roast Pork with Maple and Mustard Glaze

Absolutely OUTSTANDING! I did not change a thing--it is perfect as it. I basted it several times during cooking to get the most out of that fantastic glaze. Will make again and again.

Maple-Glazed Pork Chops

Really easy, really good. I followed the recipe exactly, except I used only 1/3 c. brown sugar. I felt like I could have cut back even a little more...I browned and baked the pork chops in a cast-iron skillet to save from washing an extra pan.

Cake with Buttercream Decorating Frosting

The frosting was one of the better ones I've tried. Very easy. I wanted mine to be stiff so I did not use all the milk the recipe called for. Very sweet but a big hit with the kids!

Buffalo Wontons

My husband LOVED these. I wanted to use up the rest of my rotisserie chicken and this was just the ticket. I didn't bother letting the sauce cool for an hour--just a few minutes in the refrigerator. Also, I added the cream cheese in with the sauce just to speed things up. Baked instead of fried. Too zippy for me but will make again soon for my husband.

Black Bean and Salsa Soup

I thought this was great and ridiculously easy! I agree with those who said to keep one can of beans whole--I would have liked it a bit heartier. Next time I may make a few additions--possibly tomatoes, cilantro, cheese--but that would just be for a change--it is delicious as-is.

Onion Bake

I loved this! I cooked the onions longer than the recipe called for, almost starting to carmelize. It had an addicting taste. Hubby didn't love it but I thought it rocked and am giving it five-stars anyway.

Baked Kale Chips

This is oddly good. I like to coat the kale with olive oil in a plastic bag, rub it around, and throw that kale into to salad spinner to get any excess off. Love my kale chips with kosher salt and garlic powder. 350-degrees for 10 minutes perfect!
