Mexican Bean Salad

I have tried many similar recipes and think this one is my absolute favorite. VERY addictive flavor! I followed the recipe exactly and it was a big hit. Served with Tostitos Scoops.

Blueberry Spinach Salad

Loved the spinach, cheese (feta), blueberries and toasted pecans but I didn't care for the dressing. I will make the salad part again with a different dressing.

Yellow Squash Casserole

Loved it! I followed the recipe exactly other than using zucchini instead of yellow. It looked really watery before cooking but came out of the oven perfect. Easy and GOOD!

Best Bread Machine Bread

A huge hit at Easter Brunch. The only change I made was increase salt by 1/2 t. I did not have bread flour, just all-purpose, and it was still wonderful. Set machine on 1.5 lbs. size loaf. Will definitely make again soon.

Ratatouille

Great! I followed the recipe to a 't' with just a few minor exceptions. I cut all the veggies with my Vidalia Chop Wizard so they were uniform cubes and mixed together instead of layering. Also, I put the onions in with the eggplant so they could soften. Next time I will double the cheese and add a little more garlic. Excellent way to eat veggies I wouldn't normally eat.

Best Ever Chuck Wagon Chili

Loved it. Like others, I skipped the habanero and used one can of Rotel tomatoes, then made up the difference with tomato sauce. Topped with shredded cheddar. Good, hearty meal.

Colleen's Slow Cooker Jambalaya

My husband loved this. He didn't even bother with rice--just ate it like a soup. I backed off on the cayenne just a touch, otherwise followed the recipe exactly. Very easy and a nice change of pace.

Baked Scallops

I am not a seafood person but my husband loved this. I loved how quick and easy it was. I followed the advice of many others who rolled the scallops in butter/garlic, then the bread crumb mix. Definitely a keeper.

Chicken Pot Pie IX

I have made this many times and LOVE it. I like to add one potato (diced) and some frozen corn, as well as use 1.5X the gravy. I also like to add 1/4 t. garlic powder and brush the crust with beaten egg white. My way or as written, it is FANTASTIC!!!

This cake was a huge hit. I followed the directions exactly, no changes and it was perfect. A little hard to get it out of the pans but the flavor and moistness of the cake more than made up for that!

Blueberry Cream Muffins

Good but I feel like there is something missing. I increased the sugar and blueberries but it still needs something...not sure what. Nice and moist, easy to make, makes a lot. I would actually give this 3.5 stars if I could.

Popovers

Ridiculously easy and good! I don't have a popover tin (yet!) so I used a muffin tin. Put a dab of butter in some cups and left some without butter. As many others have said, the ones with butter came out easily, those without butter got totally stuck--I had to tear them out. Will make again--soon!

Krista's Sticky Honey Garlic Wings

I followed the recipe exactly with the exception of using chicken breasts instead of wings. The flavor was okay, not great. Won't be making again, but if I did, I would probably add more cornstarch--it did not thicken and get 'sticky' as much as I would have liked, even though I tried cooking it down.

Southwestern Egg Rolls

I have tried A LOT of recipes on this site, and this is one of my absolute favorites--a recipe rock-star. I omit the spinach and parsley and use cilantro instead. Still awesome with less cheese. Bake for 15 min. at 425. DEFINITELY use spring roll wrappers instead of tortillas. I get mine at an Asian market--they bake up super-crispy and wonderful!

Famous Butter Chicken

Loved it! I doubled the cracker/seasoning mixture. Added a little extra garlic, also minced onion-personal preference. Used 1/2 stick butter. Be sure to either drizzle butter over the chicken while cooking or flip it over part-way through so both sides are equally wonderful. Very simple and delicious!

Great! I read the reviews and mixed a bit of Panko with the cheese on top, as some suggested. I actually think I would like it better as written, with just cheese. Very easy.
