Tomato, Corn and Avocado Salsa

I made this tonight with some fresh corn, tomatoes and peppers from the garden. It was a great combo! I made it as written. I think it would also be great with black beans/cilanto/garlic/cumin but was wonderful as-is.

Roast Sticky Chicken-Rotisserie Style

Very moist chicken, although I did't find it to be sticky. I definitely like the idea of slow roasting it. It made an easy and satisfying meal. Next time, I might tweak the spices a little to suit our personal preferences.

Zucchini Patties

Yum! What a great way to use zucchini when there is a summer surplus. I agree with those who recommended squeezing/drying the grated squash. My only change was the addition of two cloves of garlic. Next time I will try adding italian breadcrumbs but this was a delicious recipe.

Cilantro-Lime Dressing

Baked Kale Chips

This is oddly good. I like to coat the kale with olive oil in a plastic bag, rub it around, and throw that kale into to salad spinner to get any excess off. Love my kale chips with kosher salt and garlic powder. 350-degrees for 10 minutes perfect!

Asparagus and Cashews

It looks like I am in the minority here, but I really didn't care for this. I guess I expected it to resemble the sauce from the "Broccoli with Garlic Butter and Cashews" from this site--one of my favorites--but it didn't even come close. Going back to preparing my asparagus with garlic and parmesan cheese.

Breaded Parmesan Ranch Chicken

My six year old LOVED this chicken, hence the 5 stars. I thought it tasted pretty salty but good. I followed the recipe exactly with the exception of subbing Panko (whole wheat/white mix) for the corn flakes.

Jersey Fresh Tomato Soup

I made this last night after sitting in the freezing rain at my son's baseball game. Since it was on a whim, I only had canned plum tomatoes. I used two-28 oz. cans and otherwise followed the recipe closely (only subbing celery seed for salt and fresh basil for dried). SO much better than canned soup! I made some parmesan crisps to go along with this. Looking forward to making this soup with fresh tomatoes.

Ryan's Reverse Popper Dip

Love the concept of this--so much easier than individual poppers! I didn't know what to do with the onion/garlic--I just mixed in with the panko and bacon. I have another recipe for poppers from this site that I may like a little more--dry ranch dressing is mixed in--but this technique is great, and it makes a really tasty dish.

Best Ever Banana Bread

Excellent!!! I doubled the recipe and am glad I did. I used 6 ripe bananas, didn't measure. Baking time was perfect. I added a little vanilla, cinnamon and nutmeg--personal preference. Definitely a keeper!

Spaghetti Sauce II

I followed the recipe exactly and was very disappointed. We found the oregano flavor overpowering and thought the sauce was way too thick. We ended up having to add extra tomato sauce and water to thin it down. Will not make again.

Banana Crumb Muffins

And I didn't think I liked banana bread! The kids and husband will be lucky if there are any left when they get home this afternoon. I used four bananas (hate waste) and added 1 t. vanilla, plus a dash each of cinnamon and nutmeg. 18 minutes was perfect in my oven.

Salsa Ninety Nine (Mild)

I enjoyed this a lot. I scaled it WAYYY back to four servings because of what I had in the garden. Also, I did not process it--I could have eaten the whole amount in just one sitting. I did not find it to be too sweet, as other had mentioned. The directions confused me a little. Once I had everything in one pot, I just transferred it all into my food processor and gave it a few spins. Great smooth-ish texture and wonderful, fresh flavor. The only real changes I made we extra garlic and a squeeze of fresh lime.

Jalapeno Snacks

Really good! I like my bacon crispy so I microwaved it 2 minutes before wrapping--I could've even done it longer. A word to the wise: I put the peppers in ice to de-zip them a bit. I think I left them in too long--they tasted more like regular peppers. Overall, we enjoyed these a lot.
