Gourmet Mushroom Risotto

Holy hell, this was good! I used less broth and more wine (1 1/4 cup wine - 2 cups broth for a 3 person serving) and it came out perfect. I might use a tad less butter than called for next time, but only because I really don't like anything creamy. My wife loved it just as it was. This is my first time making risotto and it was a huge hit, thanks!

Seared Scallops with Spicy Papaya Sauce

Just made this for a valentine's treat... Presents extremely well with lots of color. I didn't flour the scallops and simmered 1/2 of the salsa to make a sauce as previous cooks have mentioned. Definitely recommend doing both. The cooked salsa does really brings the whole dish together. I made this with the Gourmet Mushroom Risotto (also on this site).
