Pina Colada Rum Cake

I altered this recipe a little... using Pineapple Rum instead, and leaving out the coconut. Great! Also, instead of mixing rum into the icing, I put some in a spray bottle and sprayed it on the cake after I frosted it. Gave it an all-over pineappley taste. will make again!

Basil Shrimp

Made this last night, substituting a tablespoon of minced garlic from a jar instead of the cloves. Substituted Tony Chachere's for the white pepper. We definitely didn't taste too much mustard -- we tasted too much basil. It was almost a pesto shrimp flavor. will try it again and alter the quantities.

Feta Chicken Salad

made this salad this morning (grilled the chicken breasts last night) and had it for lunch. In the future I will use more mayo than sour cream, instead of 50/50. To me, there was too much "sour cream taste", which I am not accustomed to in chicken/shrimp/potato salads.

Cream Cheese Cookies IV

I was really skeptical as I was making these, but they're delicious! The only problem was I used my electric handmixer, and the dough was so thick it was burning up the motor. My husband is not a big "cookies" person and he's easily eaten half of these! only recommendation: a little more vanilla. :) update: I've been making these for years now, using various box mixes. If you do chocolate, dip them in powdered sugar. :) also, I burned up another hand mixer, so do be wary of using one on this recipe! I use my stand mixer only now.

Brooklyn Girl's Penne Arrabiata

My husband, a friend, and I all loved this dish (friend said he was very impressed and thought it was restaurant-quality). I followed the directions exactly, tho I had to use dried basil leaves instead of fresh. I definitely used both eggs, but nowhere near 2 cups of bread crumbs... I feel 1 or maybe 1 1/3 would be plenty. The only other thing keeping me from giving it a 5-star rating is that it took me about an hour to make (start to finish), and that's a long time in the end.

My husband and I both felt there was too much lemon juice. He also felt the mustard was too strong. Some more mayonnaise and some Tony's Chachere seasoning fixed it for him.

Authentic Middle Eastern Hummus (Chummus)

I guess I just hate "authentic hummus." I made a larger quantity of this for a group event (everyone loves hummus), and nobody cared for it. I took it home, added a lot of minced garlic and some Tony Chachere's seasoning, and it was all but gone the next day.

Scallop and Prosciutto Bites

I used bay scallops and took another reviewer's tip of adding a dab of cream cheese between the scallop and prosciutto. I couldn't find the white wine, but added parmesan cheese from a can during the last couple minutes. They turned out wonderfully and were gone in no time!

Garlic Green Beans

I used fresh green beans (1 pound) and steamed them for 4-5 minutes prior to sauteing. Worked out great, they were delicious. Next time I'll use 1 less tbsp of oil.

Chicken Taquitos

this was my worst failure yet from this website's recipes. I tried the steambath for the tortillas, but I just couldn't make them stay. So my husband suggested we use 12" flour tortillas and we made 4 chimichangas out of the recipe instead. They were delicious, needed more cheese though.

Potato Chips

I gave this a try last night to compliment some hoagies. I used a potato peeler as I don't have a mandoline. I made 2 platefuls in the microwave, which didn't really yield enough chips for dinner. But it wasn't worth it, prep was just too much for the product.

Mild Cheesy Chicken Enchiladas

giving this 5 stars because both my husband and our friend could not think of any way to make it better. I omitted the black olives, and instead of tomatoes I used medium salsa. Otherwise, I followed directions exactly. The prep work (including cooking the chicken) took me 40-45 minutes.

Chicken Scampi II

This was okay. Served it with angel hair, broccoli, and crescent rolls, with pigs-in-a-blanket for appetizer and chocolate cake for dessert. The chicken had a definite scampi flavor, and was good reheated for lunch the following day. But it was a bit too oily/greasy to be completely enjoyed.
