Parmesan Sage Pork Chops

this was a pretty major letdown. I followed the instructions exactly, though I needed to bake it about 20 minutes. my husband and I both thought it was pretty plain. I won't make it again.

Modenese Pork Chops

this turned out great. I only used 3 chops but kept the sauce the same so there was plenty. I used a chardonnay for the wine, and used herbs de provence instead of rosemary. I also added a little tarragon, and then some sliced onions in the final five minutes or so. Next time I'll try adding mushrooms as well, and consider chicken instead of pork.

Pineapple Upside-Down Cake II

followed this exactly, except there's no way I could get 3c of pineapple in there - I put about 1/2 a pineapple down and moved on. I didn't have a 9" pan so I used an 8"... wouldn't do that again! the mix at the bottom came up the side and bubbled over, causing smoking and requiring me to clean the oven. All that aside, the end product was fabulous. It was ready to pull out after 45 minutes and was just delicious.

Easy Bake Fish

followed the directions precisely, using tilapia. it tasted like honey mustard and lemon-pepper mixed... maybe good on chicken, but not on fish. won't make again.

Rich Mashed Potatoes

this was my first attempt at mashed potatoes from scratch. It was easier than I was expecting, though I halved the recipe because it was a smaller crowd. I found the end product to be a little bland (I did use onion powder instead of onion salt, as that's what I had on hand), so I'd probably add more garlic next time, and maybe a little more cream cheese, as the taste didn't come through at all.

Grandma's Green Bean Casserole

I used a pound of fresh, steamed greenbeans instead of canned - next time I'd use a pound and a half, plus cut the beans smaller. I'd also add more onion - maybe a third of a cup instead. I'd also cut the cheese down to 1.5 or maybe 1.25 cups instead. Instead of normal Ritz crackers, I crumbled those thin ones - the Parmesan Herb flavor - worked out great. I also topped it with a few of the cheddar fried onions - definitely add that again. UPDATE: I used canned this time, still topped with fried onions, decided to keep the cheese the same. They were the most-requested "seconds" at my Thanksgiving table.

Uncle White's Bread Machine Rolls

something went wrong for me. I made buttermilk using 1% milk and vinegar, as I've done before and as several other reviewers did, letting it sit 10 minute before adding anything else. Otherwise, I followed the directions - took the dough out of the machine just after it did the "punch down." It was a little stickier than I was expecting but nothing ridiculous. made the balls, put them in the greased muffin tin, covered with a towel and put in the sunlight for half an hour. They rose a little more, but not doubled. Went ahead and baked them ten minutes later - they were thick and a bit hard on the outside.

Ten Minute Szechuan Chicken

I didn't think this was anywhere near as spicy as the szechuan chicken you get in restaurants. It was pretty easy to make, but not a keeper in our house.

Chocolate Ribbon Pie

used a graham cracker crust because it's what I had. The fillings were more than enough - the cool whip on top was really quite a bit higher than the edge of the pie! Everyone loved it, will definitely make again.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

this was average at best. I followed everything to the letter, except I added a little more minced garlic. The dish took the full hour in the oven, but that wasn't a big deal. I took the pan out part-way through and drained the grease, so there wasn't much in the pan at the end. I made this to use up ricotta and spinach I had, but even with the spices and cheeses it was pretty bland. I wouldn't make it again - for the taste, not worth the time/effort/price.

Sunny Pepper Parmesan Rice with Spinach

Gave this a go. Halved the recipe. Used regular rice, not instant. Used minced garlic rather than garlic salt. Used balsamic vinegar. Added another 50% spinach. I'd make it again, but I'd double the spinach next time and try something Italian-ish rather than the balsamic. It didn't "wow" and it took a while to shop all the veggies.

Cornish Game Hens with Garlic and Rosemary

I used thyme instead of rosemary - personal preference. Also used minced garlic instead of whole cloves. Only did two hens but the only thing I cut down on was the oil - otherwise it worked out fine. I had to cook the hens about 75 minutes, and they were still just barely done (thermometer read 165). I boiled the sauce 10 minutes before I just added cornstarch to speed things up. Flavor was magnificent, though - would absolutely serve for company next time!

Bacon Cheddar Chive Muffins

so I used sour cream instead of the CoM soup, butter instead of the veg oil, and 8tsp fresh chives instead of the 4tsp dried. Baked about 23 minutes - smelled wonderful! They were a bit denser than I was expecting, but hubby likes biscuits better than muffins so no problem there. He thought they were okay, I thought they were slightly above average. Overall, I wasn't impressed... took me probably 30 minutes of prep, and the end result just didn't do it for me.

Kathy's Roast and Vegetables

I used a 2.5 pound pork sirloin roast, baby carrots, and cut-up russet potatoes, but otherwise followed the directions. Browning the roast didn't help the shrinkage, but maybe that's a beef-only tip? The gravy/sauce was delicious, and the carrots were good. The pork was a bit dry after all that (and I turned it off of low to "keep warm" after 6.5 hours because it was just boiling away), and the potatoes were kind of a mess.

Angel's Chunky Chicken Salad

so I doubled everything and found that I needed about 9T of mayo, rather than the 6 that doubling would have called for. I also added more garlic powder (twice what doubling would have called for). It needed something extra so I added 3/4 diced green pepper. Might try a yellow or red pepper next time, but overall, good.

Chicken with Asparagus and Roasted Red Peppers

I omitted the tomatoes (hubby's not a fan) and used a pepper trio rather than all red, but otherwise tried to follow it exactly. Both of us chose to add more balsamic vinegar than was called for. I served it over fettuccine, though perhaps a smaller noodle would have been better. The amount of time this took didn't measure up with the average dish.
