Mediterranean Stuffed Chicken

I did the chicken pocket instead of pounding it thin. I had to bake about 30 minutes. I used toothpicks instead of twine. Hubby thought it was great, I thought it was okay. The feta didn't come through, and the dill was so-so. I'd switch to minced garlic instead of powder, and maybe do something different instead of dill... tarragon? cumin and cinnamon? something.

Pizza Pasta

I halved the recipe and made it in an 8x8". I still used 1/2 lb pasta, though, and am glad I did. I was also liberal on the sauce and cheese, and would do that again, too. I added some minced garlic to the meat and onions, and added some Italian Seasoning to the sauce. I also quartered the pepperoni and microwaved it for 30 seconds to de-grease a bit, as other reviews suggesters. I also put 2/3 of the pepperoni in the mix and placed the rest on top of the cheese. We liked it, but will play with it next time - more sauce, add ricotta as well, do mushrooms and green peppers in it, and definitely crumbled sausage instead of ground beef. Still, it's a keeper.

Chile Garlic BBQ Salmon

did this in the oven (330 for 25 min) and left out the lime and onions (availability). It was good, but not great. Could have also been my cut of salmon (wild keta), so will try again.

The Best Rolled Sugar Cookies

I hadn't tried cookie cutters since childhood (and I'm knocking on 30), so I was excited to give this a try. I halved the recipe, then, following other reviews, I added an extra cup of sugar and an extra tsp of vanilla. the taste was great. I chilled for 90 minutes, but by the time I rolled out a portion of the dough and used the cookie cutter, it was already softening and hard to pull away from the shapes. I tried the first batch directly onto the pan, but they were too close together. The rest of them I picked up and moved one by one, but I'd need to cookie cutter them dough, remove SOME of the excess, stick the sheet in the freezer for 5 minutes, then move the cookies over to the pan and put the extra dough back with the rest in the fridge. It was a lengthy process and I'll try a different way of doing it next time, though the taste itself was great!

Pumpkin Dip

I used regular orange juice instead of concentrate but otherwise followed the recipe. I would have liked it a little thicker. It also makes a TON, so like the other reviewers suggest, half the recipe. I served it at a party with sliced gala apples, celery, ginger snaps, vanilla wafers, pretzels, and graham crackers. It went over well, I just still have a ton of it. I personally thought it was best with the ginger snaps and graham crackers. I was shocked at how fast the celery went!

Paprika Chicken with Sour Cream Gravy

I'll try this again, but with some alterations. After reading some reviews, I eliminated the flour and replaced the green onions with sliced mushrooms. I also went with 1 t Garlic powder, 1 t cayenne pepper, 2 t paprika, 1 t onion powder, 1 t black pepper, and 1 t salt for 7-8 chicken tenderloins (about 1.5 lbs). I used about 1/4 c. white wine, 2 t minced garlic, a can of condensed cream of chicken soup, and 2.5 T sour cream. I liked it okay, but it was a little spicier than I was expecting, so I'd change up the rub/spice mix next time.

Garlic Kale

this was quick and simple, though the "bunch" of Kale was difficult to measure... I just used about 2 cups. I also didn't need to cook it that long, maybe 3.5 minutes instead of 5. It worked out well, and I enjoyed it, though my husband wasn't a fan.

Dijon-Tarragon Cream Chicken

I used four thighs instead of four breasts, but otherwise stuck to the recipe. I'd eliminate the olive oil and just cook in butter next time, as it made the sauce a little oily. The flavor was pretty good, I'd make it again.

Strawberry Muffins

followed the reviews of others and cut the flour by 1/4 cup, added a tsp of vanilla and a tsp of cinnamon. 25 minutes was too long - they should have come out 2-3 minutes earlier. the end result was okay, but the strawberries gave it a weird flavor - should have sprinkled sugar on them first or something. I'd try a different recipe if I was looking to make strawberry muffins in the future.

Tacos in Pasta Shells

I used 15 shells and a pound of hamburger. I diced half a large onion and cooked it with the meat. I used chili powder and cumin liberally, but no salt. I also eye-balled the cream cheese, and added until it stuck together nicely. I skipped the butter, and used green enchilada sauce and salsa verde instead of taco sauce. I baked the first round 8 minutes (non foil) and the second 15. I forgot the tortilla chips, though I was planning to follow the masa mash recipeanother reviewer had posted. I served with sour cream and cilantro. loved it, husband liked it pretty well. I'd try the taco seasoning mix next time.

Cilantro and Garlic Potatoes

I loved these! Husband thought they were good, not great. He thought they were too much like home fries. I baked the potatoes at 400 for 25-30 minutes. I cut back on the cilantro after reading the reviews, but I would have wanted more so will try it with the amount as written. I'd easily make them for company, maybe paired with the "Pan-Seared Chicken Breasts with Shallots" from this site.

Pan-Seared Chicken Breasts with Shallots

only used two chicken breasts but kept the sauce to the original recipe because so many reviewers said they'd double it. had to add cornstarch to thicken the sauce, and I also added 5-6 oz of sliced mushrooms about halfway through the chicken time. I forgot to s&p the chicken. I thought the dish was great, but hubby found it a little bland. I bet the s&p would fix that. Next time I'd serve with angel hair instead of linguine, and keep it at 1 shallot, as 2 were a bit intense.

Skillet Pork Chops with Potatoes and Onion

I used three pork chops (they were large) and 1 large onion. I don't keep bouillon around so I used a packet of sazon goya. maybe that was the problem, but I found this pretty bland. I'd probably skip it in the future, or at least switch it up to a crockpot dish and move to a pork tenderloin.

Cappuccino Bon-Bons

The recipe made 45 for me, and I substituted part of the water for cinnamon creamer for more flavor. I also used 2T instant espresso like others suggested. I liked the flavor, but be aware that there's a fine line between done and over-done on these. 8 minutes and some were soupy. 9 minutes and some were a little hard. I don't know that I'd make them again, just because I have better chocolate bite-size recipes.

Smothered Bacon Chicken

after reading some of the reviews, I made some changes. I sprinkled the chicken (I used 5 tenders) with garlic powder first. I pre-cooked the bacon part-way in the microwave, then liberally added brown sugar and black pepper, wrapping one slice of bacon around each tender. Covered with the sauce, baked 35 minutes at 350, then another 15 minutes at 400. My husband and I both liked it, but I got tired of the taste. It's also more of a cold-weather comfort food, so I think I'll try it in the fall, and maybe in the crockpot as well.

Anniversary Chicken I

I used real bacon and crumbled it, used chicken tenders instead of breasts, omitted the green onions, and skipped the pan-frying step. I also followed the ideas of others and waited to add the cheese and bacon until the last 10 minutes in the oven. worked out and would make again. Next time, I'd serve with mashed potatoes instead of pasta.

Pesto Chicken Florentine

This took about 45 minutes, but I think I could get it down to 35 if I started the pasta sooner. I used jarred alfredo instead of mix, rotini instead of penne, extra pesto, and extra garlic. I also threw some Tony's Creole spices on the chicken. I couldn't get enough - I really enjoyed it. Hubby thought it was pretty good. Maybe I'd add red peppers and mushrooms next time as well. *remember to drain the chicken/spinach pan so you don't water-down your sauce!

Pan Fried Tilapia Sandwich

I actually only prepared the tilapia to eat with something else, so this rating isn't for the sauce or the cheese-fish sandwich. The fish turned out bland... it was nice to have such a delicate fillet, but not a method I'd regularly use on tilapia.

Superb Sauteed Mushrooms

I took quite a few liberties with this recipe, the main ones being that I used balsamic vinegar instead of red wine, and garlic powder and salt instead of garlic salt. Beyond that, I quartered the amount of mushrooms but made a third of the cooking substance. worked out well and we loved it.

Easy OREO Truffles

my sister made these last Christmas and they were incredible, so I thought I'd try them for a 4th of July party. Mine were a little bigger (probably 1.25" to her .75"), but the chocolate coating totally didn't work for me - too soft! Even after being in the fridge, they were still pretty soft. I did half with white candy melts instead, and though they hardened better, they were thicker and gloppier, no way to win! I wouldn't make them again, despite how delicious they are.
