Black Bean Pizza

Woah Baby! This recipe just blew my mind!! I am so glad that I decided to try it out. It is delcious!! I added a sprinkling of chili powder to give it that extra kick. This recipe was so easy to make and well worth all of the fresh ingredients. This would also be tastey as a hot bean dip with tortilla chips on the side for dipping, or even just in a bowl with a fork! Thanks for adding a great recipe to my collection!

Vegan Pumpkin Nog

I was very excited to try out this nog recipe since we love the pumpkin flavored nog by Silk and have a hard time finding it. Maybe my expectations were too high, but my 3 daughters and I thought this was terrible. I followed the recipe exactly, and it was bitter, way too thick to drink, and bland. If you like eating plain pumkin out of the can, this recipe is for you. But, if you prefere desserts with flavorful rich autumn tastes, then you will be dissapointed. I even tried thinning the drink with more milk and adding sugar, and it still made me want to gag. Oh, well, I love pumpkin, so it was worth a try.

Crunchy Turkey Salad

This was a great way to use up our leftover turkey and make a super fast dinner. I also used 1/8 cup seaseme oil and 1/8 cup vegetable oil and it did give it an oriental twist on the flavor which I enjoyed. I didn't have any celery, but I added peas and thinly sliced carrots. I will be making the recipe again, and I would even serve it to company.

Baked Apple-Pecan Maple Pancakes

A delicious fall breakfast for my family! A 9" pie plate wasn't enough to feed 5 hungry tummys in my house, so I doubled the recipe and baked it in a 13"x9" greased baking dish. I placed the sliced peeled apples (3) on the bottom of the baking dish, and then brushed them with melted butter. Then instead of using maple syrup, I generously sprinkled brown sugar and cinnamon on them. Last I added the pancake mixture on top of that. So easy! I have even made this recipe the night before and just reheated it for a nice quick breakfast in the morning. I will be making this recipe for years to come!

Carrot Banana Bread

This was an excellent snack for the kids to enjoy while they are on their Easter break! They have gluten allergies, so I substiuted 3/4 cup white rice flour, 3/4 cup brown rice flour, 1/4 cup tapioca flour, 1/4 cup potato starch, and 1 teaspoon xanthum gum for the flour. The bread came out mosit and delicious! They couldn't even taste the carrots in it. We will be making this bread for a long time to come!

Banana Banana Bread

Delicious! I made this recipe mini muffin style and gluten free for my kids, and they went wild for it. Some of their friends even had some (we didn't tell them they were gluten free), and they said they were awesome! All I did was substitute the flour for 3/4 cup white reice flour, 3/4 cup of brown rice flour, 1/4 cup potato starch, 1/4 cup tapioca flour, and 1 teaspoon xanthum gum. This recipe is very moist, and has a strong banana taste. Gluten free baking seems to dry out quickly, but after 4 days these little muffins were still super moist!

Tuscan Bean 'Goppel'

Very good light side dish for summer time. It reminds me a lot of the restaurant dish at Houlihann's. I made it without the feta and used cayenne pepper instead of red peppper flakes, and I enjoyed it very much. Love the spice with the freshness of the cilantro!

Orange Cucumber Tossed Salad

Delicious! I wasn't sure what to expect with the orange juice in the salad dressing, but it was a great surprise for something different. I used olive oil in place of the oil and agave syrup in place of sugar for a healthier twist. I loved this dressing! Nice combination with the cucumber and oranges too (I just used mandarin). I am thinking that peas would be yummy in this salad too. Thanks for a great recipe!!!

Spaghetti Squash I

This was my firt time making spaghetti squash, and I couldn't believe how easy it was! I found the squash very hard to cut, as other squashes are, so I ended up using an electric knife, and it was super easy and fast. I cooked my squash for 45 minutes, and it came out great! I loved the flavor if this dish with the basil (I used dried) and onions, and I did add a little sprinkle of garlic salt for more flavor. My 3 kids (9,6, and 2) just gobbled this up and even asked for seconds!!! They actually ate one entire half! They thought it was so cool they were eating a spagehtti plant! Little did they know it was a sqaush because they really don't like the usual sqaushes. My 9 year old said it was awesome, and she really hates her veges! Another plus is that you don't have to worry about putting a nice huge portion size on your plate because it is so healthy, and yes, you actually do get full. We will be making this one again!

Cilantro-Lime Dressing

Sooooo delicious and refreshing on a summer time salad!!! I have even made it without the peppers, and it is still wonderful! I love tossing it in a salad with lettuce, tomato, cucumber, corn, black olives, black beans, grilled chicken, and crushed up tositoes. Perfect for lunch or dinner on a hot day!

Chicken Salad

My entire family, including the kids, loved this recipe!!! I did use pinapple in place of the water chestnuts, and it gave it a nice sweetness and great flavor to compliment the bacon. Next time I would use 1/2 cup of mayo because it was a little too wet and mayonnaisey tasting. I had to soak up as much mayo as I could with paper towels before serving it, and luckily it came out well. We ate this on toasted bread for a picnic. I will definitley be making this for many years to come. Thanks fr the great recipe! You never can go wrong with Taste of Home!

Best Guacamole

Way too lemony!!!!! After doubling the avocados, to try and kill the intense burning lemon flavor, it is still very strange tasting. 4 avocados later, I am stuck with a huge bowl of guac that is one of the worst I have ever tasted. Too bad; I was looking forward to it!
