Best Guacamole
Way too lemony!!!!! After doubling the avocados, to try and kill the intense burning lemon flavor, it is still very strange tasting. 4 avocados later, I am stuck with a huge bowl of guac that is one of the worst I have ever tasted. Too bad; I was looking forward to it!

Cilantro-Lime Dressing
Sooooo delicious and refreshing on a summer time salad!!! I have even made it without the peppers, and it is still wonderful! I love tossing it in a salad with lettuce, tomato, cucumber, corn, black olives, black beans, grilled chicken, and crushed up tositoes. Perfect for lunch or dinner on a hot day!

Spaghetti Squash I
This was my firt time making spaghetti squash, and I couldn't believe how easy it was! I found the squash very hard to cut, as other squashes are, so I ended up using an electric knife, and it was super easy and fast. I cooked my squash for 45 minutes, and it came out great! I loved the flavor if this dish with the basil (I used dried) and onions, and I did add a little sprinkle of garlic salt for more flavor. My 3 kids (9,6, and 2) just gobbled this up and even asked for seconds!!! They actually ate one entire half! They thought it was so cool they were eating a spagehtti plant! Little did they know it was a sqaush because they really don't like the usual sqaushes. My 9 year old said it was awesome, and she really hates her veges! Another plus is that you don't have to worry about putting a nice huge portion size on your plate because it is so healthy, and yes, you actually do get full. We will be making this one again!
