Oh My Gosh Muffins

The only changes I made to this recipe was to reduce the sugar by a third, and swapped in some brown sugar. The recipe worked great.

Portuguese Custard Tarts - Pasteis de Nata

I reduced the sugar by a third, but still found the custard a little too sweet. In place of vanilla, I used a few tablespoons of coconut cream instead. The coconut gave the custard a rich, fragrant flavour. This recipe is really easy, and the tarts tasted great.

Orange Sponge Cake

I reduced the sugar by a third, added a tbsp dollop of orange marmalade. Used the juice of one medium orange, and a thick slice of orange skin. The flavour was great! But like a few of the previous posters, my cake turned out chewy, not light and fluffy like I had expected. Can any one tell me what I did wrong?

Chantal's New York Cheesecake

The suggested baking time was a little too long (for my oven) but apart from the slightly browned top and edges, the cake turned out really well. It was the very first cake I've ever baked, and it got really good reviews! It turned out to be a little more dense then I had expected, but the texture was right. I added some instant coffee to give it some kick. Really easy to make. My husband was disappointed that there wasn't more because everyone else had finished the cake.
