Hasty Chocolate Pudding

I love it that this simple recipe has no eggs! I hate accidentally scrambling the eggs when I make pudding. Very nice flavor and very minimal work. Mama would add a pat of butter at the end, so I did too. Delish!

Spanakopita II

Yummy and probably worth the work and time it takes to make these, but I would rather eat them than make them! I don't think the directions state to cut the phyllo in half before folding into triangles, but the how-to video explains it all. I froze a bunch to bake later.

Sugar Coated Pecans

My 11 year old daughter made this terrific recipe substituting vanilla for water and doubling the cinnamon. She used a ziploc for the sugar coating. The nuts turned out so addicting and delicious! She takes them to school for a snack every day.

Spinach Salad with Baked Goat Cheese

Soft Oatmeal Cookies

This is a delicious cinnamony oatmeal cookie. Some of my cookies were chewy because I cooked them longer and some were very soft. Both are yummy! No raisins for us and they turned out just great. Thanks!

Super-Delicious Zuppa Toscana

My family enjoyed this soup very much. I made some changes--half and half instead of cream, used part sweet and part hot italian sausage, and darn kids would not let me put any kale or spinach in! Didn't need the bacon; plenty of flavor without it. Would be good (and quick) with canned cannellini beans instead of potaotes. Yummy and will make again!

Herb Roasted Pork

I used a pork tenderloin and roasted to 160 so cooking time was pretty quick. I used rice vinegar and just a little ginger. This was delicious! I loved the savory sage flavor combined with the slightly sweet sauce. Really yummy and would be nice for company too.

Jo's Rosemary Bread

I made the dough in the bread machine and then removed it to shape, rise and bake. This is just a great recipe. My kids dip this in olive oil/balsalmic vinegar. It is so good! Thanks for a great recipe!

Chocolate Eclair Cake

My mom made this for our family when I was just a kid. Well, I'm not a kid anymore but this is still a great recipe--especially for a big crowd. I would highly recommend using the recipe from the back of the Hershey Cocoa can for the frosting though.

Pumpkin Cake II

Really good cake mix cake. I used the whole 15oz can of pumpkin b/c I didn't want to waste any of it. Only used 1/2 c sugar and used pumpkin pie spice instead of cinammon. Next time I would use closer to a tablespoon of spice instead of a teaspoon (personal preference). Quick and easy and flavorful cake. Thanks!

Baklava

So good! I read and am thankful for all the reviews. I used 1 1/2 times the syrup as recommended and also poured it cooled onto hot baklava. I toasted the nuts and used mostly walnuts and a few almonds. I bought a new silicone pastry brush to apply the melted butter (ended up using 3 sticks) and it worked great. I also tried a pizza cutter for slicing but thought the knife worked just about as well. The baklava takes a while to put together, but is not difficult. Totally worth the time and effort. Thanks!

Chicken Enchiladas II

These are some family pleasing enchiladas! I poached 5 frozen chicken breasts then shredded the meat. I used 2 cans of cream soup and 1c sour cream to almost double the sauce. Added a bit of sauce to the dish prior to putting in the filled tortillas. By the way, the green chillies are flavorful but not spicy. I got 10 plump enchiladas out of this recipe. I would highly recommend this flavorful recipe!

Sage Pork Chops

The kids saw me making these chops and wanted them to be lemony, so we added a splash of fresh lemon juice to the sauce and they were delicious. It really brightened up the saltiness of the boullion. Easy and flavorful recipe. Thanks!

Best Fried Green Tomatoes

Crispy and delicious! I followed this recipe as written, but only used enough oil to pan fry--no where near a quart. They turned out better than I remember my mom making. I don't think it matters how green the tomatoes are. Mine were as green as green could be and they turned out great. Thanks!

Easy Chocolate Chip Pound Cake

Easy and well liked by my family. It probably would be just as good with much less oil, but I made the recipe as written except I used about a cup of semi sweet chips. Great cake mix recipe!
