Heavenly Chocolate Mousse

Excellent - rich and decadent and extremely easy to make. Best with coffee instead of simply water as it enhances the chocolate flavours. Top it with fresh strawberries and your guests will think they've died and gone to heaven!

Carrot and Ginger Soup

I love carrot ginger soup and chose this recipe because of the great reviews it has listed. I wouldn't have thought to add cinnamon so that was a great touch. I used half water and half coconut milk as my liquid base which eliminates the need for the cream and gives a wonderfully rich flavour. For a little variation, add some chopped fresh cilantro from your herb garden and squeeze in some fresh lime - makes it a different kind of yummy. For winter I like to add a tblspn or two of smooth peanut butter to the original recipe - something I've always done with squash & pumpkin soups. Delicious.

Pesto

Simple, traditional, perfect! This is the way real pesto ought to taste. I did add lemon juice to prevent discoloration and I added a bit of sea salt for extra flavor. I tripled this recipe and froze it in muffin tins then later put them in ziploc bags. Thanks for a great recipe!

Lemon Pepper Shrimp with Mustard

We loved this recipe! Added a few personal touch for our taste buds and my husband & I thoroughly enjoyed it. I used dijon mustard, 1 cup of wine instead of the half, added cilantro & the juice of half a fresh lemon as well as a tblspn of maple syrup to cut the tang of the mustard and lemon, then served it on a bed of fresh spinach pasta. Yummy! This is sure to be one of our regular dishes.

Banana Oat Muffins

Marvelous! To make them healthier, I reduced the oil a tad, replaced sugar with honey and added cinnamon & nutmeg. They're so moist and light - a new favourite!

Lemon Herb Lamb Chops

Excellent results with this recipe - I marinated my chops for about 4 hrs and baked them at 400F for an hour. I topped them with potatoes and carrots and wrapped the whole with foil. My husband loved them! This will certainly become a favourite.

Banana Loaf

I've tried many banana loaves and none have ever been as well received as this one! It's so simple, light and delicious! I add a half tsp of cinnamon and substitute sugar for maple syrup (3/4 cups for each cup of sugar minus 3tblsp of liquid per cup of maple syrup used). Perfect!!!

World's Best Scones! From Scotland to the Savoy to the U.S.

This are FABULOUS. I make them savory by adding herbs and garlic powder. Delicious! I've served them often for breakfast and never had one left over. They always turn out perfectly.

Cucumber-Avocado Salad Dressing

I'm a huge fan of avocado so this dressing was perfect for me. It's really creamy and tasty. I added some fresh herbs that suited my palate. Excellent! Definitely a keeper.

Carrot Coconut Lime Soup

Excellent soup - great blend of flavours. I used light coconut milk and cut down on the amount used by half to make it lower in fat. I also increased the amount of ginger considerably. yummy!

Marinated Orange Roughy

Orange roughy is only tasty with the right marinade to bring out its flavour. This recipe is excellent. My husband, who is not fussy about this particular fish raved about it! It was delicious. I did make a few changes. I used tomato past instead of ketchup as I'm not a fan of processed foods. I also used sesame oil instead of canola and didn't add sesame seeds although I'll do that next time. It's a quick dish to prepare and guests are certain to enjoy it. You really cannot go wrong with this one!
