Pumpkin Muffins with Streusel Topping

Reviewed: Oct. 31, 2012
This recipe is magical! I had to make a few adjustments because of health reasons. Anyone who practices alternative baking knows what a pain it is to make adjustments and, often times, the recipe doesn't turn out or it is just so-so. But this recipe? Magical! I used a gluten free flour blend in place of the all-purpose flour. I substituted one for one. I then reduced sugars to 1/2 cup total, using coconut palm sugar in place of the refined sugars. I then substituted coconut oil for the vegetable oil--one for one. Even with my adjustments these muffins came out incredibly moist and delicious. I struggle with muffin recipes as most GF muffins are dry, sometimes crumbly and simply not good. I was so very pleased with how these turned out. Very moist, full of pumpkin flavor (I find that pumpkin flavor often gets lost in the baking process) and delicious! Thanks for a great recipe!! Great way to start Halloween morning. :D

Candy Cane Cookies II

Reviewed: Dec. 14, 2010
Baking cookies is a hobby. It is rare to find a recipe I can't work with. This recipe was terrible. The dough was difficult to work with. I did my best. The cookies fell apart when I removed them from the oven. Not that it mattered as the taste was not good. They were so bland. I was very disappointed as were my kids.

Magic Cookie Bars from EAGLE BRAND®

This has been a holiday staple for years. They are always a big hit with the family or at gatherings. Instead of chocolate chips we use baking M&Ms. The colors just make them seem more festive for the holidays. We also leave out the nuts.

Slow Cooker Kielbasa and Beer

Reviewed: Feb. 12, 2008
This recipe is awesome! So easy and so delicious. The entire house smelled so good and we looked forward to the meal all day. I was going to alter this quite a bit as others here suggested but my husband was convinced it would be great just as the original recipe states. So, all I did was cook up a few onions and garlic to mix in. That was the only thing I did differently. We used a bottle of Guinness. PERFECT! I'm glad I listened to my husband and kept it simple.
