Cheesiest Tomato Soup
I kicked this basic recipe up a bit. I started by sautéing onion,carrot,celery and garlic in olive oil until soft. I then pureed them with some chicken stock and added to the pureed tomatoes. I also dropped the chicken stock to 4 cups and added a cup of heavy cream. I also added 3tbsp sugar and a good shot of Chalula hot sauce. As other reviewers have said, I added the cheese after the soup came to a boil. The cheese blended right in. This is one of the best tomato soups that I have had.

Shrimp with Tomatoes and Feta Cheese
Very good recipe with some changes for my personal taste. I dropped the jalapeños, added saute'd baby spinach and served it over angel hair with garlic and herb feta. We'll be having this one again.

Best Ziti Ever
The basic recipe is good but I kicked it up a bit. For the sausage mixture I used 1/2 lb sweet sausage, 1/2 link hot sausage, 1/2 lb mixed beef,veal & pork, 1 lge onion chopped, 2 cloves garlic, sliced mushrooms and seasonings. To the Ricotta I added 1 egg more garlic and Italian seasoning. There is also no need to heat the marinara before baking if you buy a good one. Total: 2 pots, 1 bowl, cutting board, knife and 2 spoons. Results: excellent & easy
