Buttermilk Biscuits I

I used to bake biscuits for a fast food restaurant and I have some tips for those of you that have never made biscuits or that are struggling to get them right. 1. Never over-work your dough. Mix it only as much as you absolutely have to or it will be tough. 2. Don't add too much flour! flour can be affected greatly by the humidity in the air so what works today may not work tomorrow. Biscuit dough should NOT be easy to work with, it will be pretty sticky. If you add enough flour so that it is easy to work with your biscuits will be dry. 3. Your shortening should be left in small chunks (about the size of a pea) so that your biscuits will be flaky. You can substitute a little butter for part of the shortening to give a richer flavor but your biscuits won't raise as well. 4. Roll your biscuits to at least 1/2 in thickness (or more) to have nice high biscuits. When you cut them push straight down and straight back up. Twisting the cutter will cause your biscuits to raise unevenly. This is a good biscuit recipe, flaky and delicious but I'm still looking for the perfect flavor.

Eggplant Delight

Delicious! I did make some changes so I gave the recipe 4 stars. I sliced my egplant thin and added fresh garlic with the onion. I layered egplant, onion, mild cheddar cheese, tomato slices and then sharp white cheddar on top. Then I put them in the broiler until the cheese was bubbly. I sprinkled oregano on some of them and liked it w/ and w/o oregano.

Martha's Clam Dip

I've been searching for a good clam dip recipe that didn't have that preservative flavor like the ones you buy. This was absolutely delicious! Let this chill several hours before making any changes, it tastes great as is after being chilled.

Buttermilk Biscuits III

These biscuits had a very good flavor. I didn't have self-rising flour so added 1 1/4 tsp baking powder and pinch of salt for each cup flour. They didn't darken but were a light golden brown.

Parmesan Sage Pork Chops

Awesome! tender, flavorful and delicious! I tend to stay away from breaded pork chops but wanted to try something new and without gravy. My DH was very apprehensive so I made some the way he likes them but when he tasted one of these he said he was putting his back. :) It's a winner! Thanks

Mom's Buttermilk Pancakes

Delicious and super easy! Do half the salt and use buttermilk (do not substitute) and when the batter seems really thick, leave it that way. It will flatten out to make perfect pancakes as it cooks.

Definitely reduce the salt! I put 1 tsp and that was still plenty. I'm sure the size of the avocado makes a big difference. I put 3 in since mine were pretty small. I also only used 1/2 an onion and bottled hot peppers. Good flavor. thanks

Bread Machine Pumpernickel Bread

This was a good bread. I thought it had a little too much cocoa as I could smell it while eating, that was just strange to me. I will probably try it again and reduce the cocoa a little. I didn't use caraway seeds or wheat gluten.

Roasted Vegetable Ziti Bake

Delicious!! The one major change I made was that I chopped the veggies & put in a ziploc to coat w/ olive oil and salt. Then I grilled them in my grill basket. There was no way I was going to have the oven on that long. I also doubled the sauce and used some of the noodles and sauce to make up a hamburger version for my husband. I made minor substitutions based on what was in my garden: red pepper instead of yellow, swiss chard instead of spinach. And I'm sure I used way more cheese than that. I don't measure cheese and also put some in the middle layer. Oh and I used fresh tomatoes but only because I was in the process of peeling a bunch and petting them ready to bottle.

Toscana Soup

The best use for kale I've found. Wow! This soup is so good that even my DH who hates green stuff likes it. I have made this twice in a week. I used 4 small potatoes, 4 large Johnsonville sausages, and about 2/3 cup heavy cream with 2 tsp cornstarch mixed in it to thicken it up a bit. I also added about 1/4 tsp red pepper flakes because I like things a little spicy.

Frozen Strawberry Cheesecake Sandwich Cookies

Super good and easy. I used fresh strawberries about 1 1/4 cups (sliced before pureeing them) and put them in the food processor until they were small chunks. I used strawberry flavored cool whip only because that's what happened to be in my freezer. Next time I will put in more strawberries.

Rachel's Cream Cheese Fruit Salad

This was delicious! We made a few changes; we increased this to 10 servings but still used one 8 oz. container berries-n-cream cheese, strawberries are not in season so the ones at the store were disgusting so we used kiwi instead, and we took other's advice and used nuts (glazed pecans) instead of the pretzels. Very yummy!

Barbecued Pork Chops

I usually don't try recipes that have not been rated but I'm glad I did this time. These were very good and moist. I didn't use the microwave but cooked them in the oven in a stoneware roaster. I was out of dry mustard but the flavor was very good w/o it. Thanks
