Chicken Tetrazzini for a Crowd

This was great and pretty easy. Since my husband thinks that spaghetti noodles are only for spaghetti I decided to use rotini noodles instead. It worked great but I still like it better with spag. I also added a little onion and garlic and had no pimentos.

Honey Wheat Bread

Delicious! I made two batches, one with fresh ground hard white wheat and the other with fresh ground hard red wheat. We wanted to see which wheat made better bread. Both were delicious! I used white bread flour and added 1 T dough enhancer (available at food storage or baking supply stores)

Quick Biscuits

These may not be the very best tasting biscuit I have ever made but they are so easy, I will definitely make them again! These will be great for camping since there's no shortening mess and I bet they will cook up great in a dutch oven. I used the substitute for self-rising flour and mine did need more cream do make a nice biscuit dough.

Baked Fettuccine Lasagna

This was good and easy. I did use more cheese than called for, about 1 1/2 C of each kind. I was out of olives and parmesan cheese. I put a little mozzarella on top of the sauce. I used my home-bottled diced tomatoes and should have drained a little juice off of them but it still tasted good.

Double Quick Dinner Rolls

These are not the best rolls ever but as far as a good but fast recipe it's great. I made them a few weeks ago and didn't follow directions, kept adding flour until they were more like reg. roll dough and my husband compared them to unleavened bread. (They really weren't that bad but weren't as soft as my reg. dinner rolls) Today I followed the recipe but reduced the onion powder to about 1/3 tsp since the onion flavor really didn't go well with our main dish. They were easy, light and yummy. Will definitely make again but won't through out the reg dinner roll recipe :-)

Ginger Glazed Mahi Mahi

YES! I found some Mahi Mahi down in the bottom of the freezer that was starting to get freezer burn so I was looking for something that would have a good (little bit strong) flavor. This was super! I only had 3 fillets and the amount of glaze was perfect. It was so good I ate 2 of them for my lunch.

Garlic Mashed Potatoes Secret Recipe

super! I did add some milk and used sharp white cheddar (that's what I had) and zapped the chopped garlic in the microwave with about 1/2 t olive oil before adding it to the potatoes since I prefer my garlic cooked. Great flavor. Thanks

Eggplant Delight

Delicious! I did make some changes so I gave the recipe 4 stars. I sliced my egplant thin and added fresh garlic with the onion. I layered egplant, onion, mild cheddar cheese, tomato slices and then sharp white cheddar on top. Then I put them in the broiler until the cheese was bubbly. I sprinkled oregano on some of them and liked it w/ and w/o oregano.

Grandmother's Buttermilk Cornbread

WOW! The search for great cornbread is over. My Husband said it's the best cornbread he's ever had. This cornbread has excellent flavor, texture and was nice and moist. I followed the recipe except I added a little honey (just drizzled over the top and then stirred it in a bit) and I did use extra large eggs. I cooked the cornbread in a round stoneware pan. Thanks for sharing.

Creamy Chocolate Frosting

This was so easy and tasted great. I ran out of cocoa so I only put in about 3 tablespoons and that was perfect for me (a person who doesn't care for chocolate much) My husband (a chocolate lover) likes it but of course would have liked a little more chocolate. I, too, used reg milk and only needed about 5 tablespoons to make it a soft spreading consistency.

Blackened Fish

this was very good. I was only using two small trout that had been in the freezer a while and thought that if I made something with a lot of flavor for it it would be good. It was great though my husband doesn't like things very spicy and he liked it but kept saying it was very spicy, I thought it was perfect. Thanks for a great easy way to prepare fresh or frozen trout.

Bake Sale Lemon Bars

These were just okay for me. The only change I made was doubling the lemon juice. I was using bottled and tasted the filling (i know raw eggs but they've never killed me yet) and decided to add more lemon juice. I put almost 3/4 cup in. But I like my old recipe which has more filling.

Raspberry Trifle

Yummy!!! We made 3 trifles for a big party and I have to say this was my favorite. Everyone liked it. We used fresh blackberries since they were on sale that day. :) and mashed a few of them to use for the juice. Delicious!

Ranch Dressing II

I have been making this for a while as the recipe is written except for using buttermilk in place of sour cream or using 1/2 cup each of sour cream mayo and buttermilk. Today I decided to use fresh garlic & onion both pressed in the garlic press and then fresh chives, basil (instead of parsley and increase salt. So basically, I have done what I hate when other people do and completely changed the recipe. But it is still is good. As it is written the recipe is good but it is also a great basic idea to play with.

Shrimp Scampi Bake

I used 1/2 olive oil and 1/2 butter and added some fresh basil as some others had suggested. I marianated the shrimp in the olive oil and seasonings for a few hours and then added the butter just before cooking. This was pretty good but I thought it needed a little more and added salt when I ate it. I actually like the Grilled Shrimp Scampi by Holli Murray a little better, the ingredients are not a lot different so maybe it's the grilling that is the difference. I may try this again and grill it. May try adding a little sea salt too.

I have actually made this several times and my daughter & I love it (the rest of my family are strange and don't like shrimp). I usually put all the shrimp along with the marinade in a foil packet on the grill but have done it the way the recipe is written as well.

Hawaiian Bread I

I made this w/ vanilla instead of coconut flav and w/coconut flav. I also made it in bread machine and another time just made the dough in the bread machine. My favorite version is using the ingredients as stated in recipe, increase to make 2 lb loaf. Make dough in bread machine and then bake in 2 stoneware bread pans, 350 for about 25 min. Then make a glaze to go on top using powdered sugar pineapple juice from the pineapple and coconut flavoring. put glaze on top of loaf while it is still warm and serve warm. It was delicious and everyone at the party I took it to wanted the recipe.
