Baked Ziti IV

Reviewed: Jun. 13, 2010
I thought this was just average. I added more fresh herbs but still thought it needed more flavor.

Easy Chicken Enchiladas

Reviewed: May 2, 2010
I have made these several times and love how fast and easy they are. This time I added some sour cream to the cream cheese and salsa mixture and reserved some to put on the top before the cheese. I have also added some of my bottled hot chilis. Thanks for a great recipe.

After-Thanksgiving Turkey Soup

Reviewed: May 2, 2010
YUMMY! I had some whipping cream so I used 1 cup whipping cream and 1 cup milk for the half and half. I have a big stoneware bowl so I cooked it in that in the oven and it was super easy and I didn't have to worry about scorching the cream. I will be making this again.

Mom's Buttermilk Pancakes

Reviewed: Mar. 25, 2010
Delicious and super easy! Do half the salt and use buttermilk (do not substitute) and when the batter seems really thick, leave it that way. It will flatten out to make perfect pancakes as it cooks.

Johnny's Biscuits

Delicious! I substituted 2 cups flour, 3 tsp baking powder and 1/2 tsp salt for the self rising flour. I used cold butter and grated it. Thanks for a great recipe.

Parmesan Sage Pork Chops

Reviewed: Jan. 31, 2010
Awesome! tender, flavorful and delicious! I tend to stay away from breaded pork chops but wanted to try something new and without gravy. My DH was very apprehensive so I made some the way he likes them but when he tasted one of these he said he was putting his back. :) It's a winner! Thanks

Turkey Pot Pie I

Reviewed: Jan. 29, 2010
Delicious! I didn't think it looked like nearly enough turkey so I added more. Didn't have celery so I used more carrots. Next time I have leftover turkey I'll think about this ahead and cut my turkey thicker so I have a little bit larger chunks. Thanks for a great recipe.

Flatlander Chili

Reviewed: Jan. 16, 2010
This was very good and pretty easy to make. I used Tomato paste and diced tomatoes and had to add water because it was so thick. I used 1 qt jar of black beans and would like to have more beans in it. It was very meaty with a few beans but a good flavor. Next time I'll probably use 2 qts. of beans.

Breakfast Casserole III

Reviewed: Dec. 25, 2009
Great breakfast casserole. I put everything together except the eggs on Christmas Eve and then just added the eggs in the morning and bake, covered. I left it in while we unwrapped presents, it took about 45-50 minutes probably because it was cold going in.

Homemade Pork Sausage

Reviewed: Dec. 25, 2009
I used ground turkey it was good but not great. I would like a little more flavor but it could have been because the turkey has less flavor than pork.

Absolute Best Potato Casserole

Reviewed: Dec. 21, 2009
This was just ok. I used leftover spiral honey ham and thought it might be better if it didn't have the sweet flavor. I liked the sauce but if I try this again I think i will mix everything together instead of layering it. I didn't use cauliflower.

Chicken Noodle Soup II

Reviewed: Dec. 16, 2009
My first time making home made noodles. This was great and easy to make but did take a little time. I mixed the noodle dough in my stand mixer and I'm glad I had it. Was thinking it would be nice to have one of those handy pasta attachments for my mixer but I thought it was a great extra arm workout today :) I used leftover turkey and added just a little thyme. I didn't simmer for 2 hours as it was getting late for dinner. Thanks for a great recipe.

Taco Pie

Reviewed: Nov. 22, 2009
Great! and super easy! I cooked a little onion and 2 small hot peppers with the meat and added a can of kidney beans to the meat. I used the crumbs left in the bottom of a bag of tortilla chips (about 1 cup crushed) and thought it was plenty of chips. I put them on top of the cheese like the recipe says and liked it that way because they were crispy. Olives and tomatoes go great as a topping. Thanks for a great recipe.

No Bake Cookies VII

Reviewed: Nov. 12, 2009
I didn't actually taste these but had my 9 yr old boy scout group make these and they loved them and wanted the recipe to take home so they could make them again. I had them dust their hands good with powdered sugar before rolling them, the ones that did didn't have any trouble with them sticking to their hands.

Quick and Easy Pizza Crust

Reviewed: Nov. 12, 2009
Super fast and easy but my favorite part is that it didn't go soggy in the center like so many homemade pizza crusts. I doubled it and made one pizza and 4 large calzones. Yummy!

Eggplant Bake

Delicious! I added some roasted garlic (3 cloves, finely chopped) and chopped the onion and sauteed it before layering it. I also substituted a mixture of monterey jack and mozzarella I had in the freezer for the Feta cheese and sprinkled some fresh basil on top before baking.

Fresh Peach Pie I

Reviewed: Oct. 7, 2009
This tastes great. I love fresh peaches! I increased the cornstarch by 1 T and I decreased the water but it still didn't set up great. Looked great until I cut it but still tasted great! Just realized I forgot the nutmeg, have to try again :)

Hot Italian Sausage

Reviewed: Sep. 28, 2009
I needed some sausage but didn't want to go to the store. I scaled to use 1 pound of meat and substituted ground turkey and ground cayenne instead of red pepper flakes. Tastes great and easy! Thanks for a great recipe.
