I am married with 3 fun children. My daughters are on their way to college soon and my son is 7 and busy! I teach Kindergarten full time. I love to cook new things but hate to clean up.
My favorite things to cook
Whatever sounds good that day, bread is always good! I don't like sweets too much though so I only do them for others.
My favorite family cooking traditions
I learned how to do home-canning from Mom and bottle lots of salsa every fall. I grow the tomatoes, peppers, onions and cilantro in my garden.
My cooking triumphs
It's a triumph if my husband and all three kids like it! My biggest joy lately is my 7 yr old son's night to cook. On Tuesday nights I help him cook dinner for the family and he always loves what he cooks. I am so proud of him and he is already starting to love cooking, I know that someday his wife and children will thank me ;)
My cooking tragedies
When my husband and I were first married I tried to make pancakes from a mix and followed the recipe. They were so thick and disgusting. Good thing my husband had already tasted my cooking or I think he might have run the other way! The problem...I had never made any pancakes before because my sister was so good at making pancakes from scratch that I never had to.

Easy After Work Chicken Francaise
This was delicious! Took some to my neighbor as well and they voted it the best dinner of all the ones brought in when he had knee surgery, pretty awesome to be the winner using an easy recipe. The only change I made was that I didn't read the directions very carefully and put most of the butter in with the oil when I fried the chicken. I had intended to decrease the amount of butter but then after frying I added the rest of the butter to the pan. It was delicious and buttery, I will do it again next time. I did double-dip the chicken as well.

Shoyu Chicken
I guess I should have read how much chicken before making the marinade. It still worked out great because I only used about 2 lbs of chicken and marinated it in about half of the marinade then saved the other marinade to heat up and brush over the chicken while cooking. I then put some of the hot marinade over rice. Delicious!

Cajun Chicken Pasta
I didn't really measure and used a lot more Cajun spice and mushrooms. In my opinion I should have used less peppers (I used all red). I did use fresh lemon juice, garlic and fresh basil. This was great! Thanks
