Jalapeno Popper Spread

ADDICTING is an understatement! I added a whole can of jalapenos & the whole can of chilis. I certainly didnt think it was too spicy. I did the panko breadcrumb & parmesan cheese mixture on top & baked. Wow! Took to a family party & it was gone instantly! Served with tortilla scoops. What a hit!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Awesome! I recently went on a wheat free diet so finding desserts without it is tough. I made these for a meeting at my work and everyone raved over it! It was dense and more like a brownie than a cake, but just awesome! I put Cool Whip on top and crushed up toffee pieces. I will for sure make this again!! Thanks so much for this awesome recipe!

Pistachio Cake II

Awesome! I made this for my boyfriends bday since he is a huge pistachio fan. I used Duncan Heinz white cake mix as suggested by others since there is no pudding already in that mix. I used Cool Whip and a packet of pistachio pudding for the topping. Maybe added 3TBSP of milk or so. The frosting was gritty, but I let the cake sit frosted for hours & the grittiness went away. I sprinkled pistachio nuts on top. This was a HUGE hit! I have to make it for a co-worker now since she took one bite and flipped out! AMAZING recipe!

Chicken Marsala

This was awesome. I served with whole grain linguine noodles, garlic breadsticks and a caesar salad, and red wine. Soooo good!!! I probably would omit breading the chicken next time though. Being that it's a flour coating, it got soggy after pouring the marsala & sherry in. Not to where it was gross or anything but I think the breading was sort of unnecessary.

Baked Dijon Salmon

This was really good. I made it exactly the way the recipe stated. However, after trying the "Spicy Salmon with Carmelized Onions" recipe on this site, this recipe didn't impress me like that one does. I'll make it again, but if anoyone is looking for another great recipe, try that one for sure...especially if you like spicy stuff!!

Amazing Italian Lemon Butter Chicken

I didn't really care for this. This took a lot of prep and the sauce wasn't that good. For the amount of time this took and the way it tasted - it just wasn't for me. I won't make this again.

Brilliant Sauteed Broccoli

This recipe actually makes me WANT to eat broccoli! The hot from the pepper flakes & the sweet from the brown sugar makes this broccoli taste incredible! Even my anti-vegetable boyfriend went back for seconds and praised this recipe! I did everything as written. The only small thing I added was a slight drizzle of balsamic vinegar glaze to it. That just added to the awesomeness! This is practically a weekly side dish now!

Baked Kale Chips

These are awesome! My first time making kale chips. I put sea salt, garlic powder & a few of them I sprinkled some cayenne for a kick. AMAZING! I have a double oven with a little oven on the top so things tend to cook a lot quicker in there so I cooked for 15 mins at 325. They came out perfect! I can't wait to try different combinations! Parm cheese will be next! :)

Ham and Bean Soup II

My boyfriend received a ham at Christmas from his work and I told him I'd make him some recipes to use it up. This was one of the recipes he selected. This was my first crack at ham & bean soup. I did everything according to the recipe...except I added chicken boullion as others suggested and I did 4 carrots & 4 celery stalks. The house smelled INCREDIBLE while cooking. And let me just say, that I am a vegetarian and this recipe actually made me want to eat ham...I didn't of course, but man I wanted to! My boyfriend raved about this soup and I'm sure next Christmas he'll have me make this again!

Spicy Salmon with Caramelized Onions

Wow, this is simply incredible! This was the first time I ever made salmon and I followed this recipe exactly. I LOVE hot and spicy food and let me tell you that this certainly had a kick so be warned! Noses will be running for sure with this dish! My boyfriend said this was the best salmon he has ever eaten and I have to agree! I can't wait to make this again! It's for sure going to be a repeated recipe in my house! Thanks for sharing!

Easy OREO Truffles

Amazing! So easy & so good. Been waiting a long time to try these & finally made them and wish I hadn't waited so long! After combining the cream cheese & cookies together, I put it back in the fridge for a bit to let it harden a bit. I rolled a few balls before doing that & they were sticking to my hands as I was dipping them in chocolate. The extra few mins in the fridge took care of that problem! Will make again soon for sure!

Easy Toffee

My aunt has made this for decades. So happy to find a recipe just like hers! I don't use the almonds. Let me tell you - this is a HIT at any party I've ever been to. My coworkers actually named this "crack candy" because it's so addicting! :) AWESOME recipe.

Margaritas

These were really good margaritas. I think they're pretty sweet, but I think margaritas in general isn't something that I can personally drink all night long. I had a party though and my one cousin took care of the pitcher! I will for sure make these again for guests. And maybe do some tweeking next time to see if I can make it a little less sweet. Great & easy recipe though for sure!

Curried Coconut Chicken

Very good! I used Thai curry paste & let cook for about 5 mins with the oil. Then I added the onions & garlic & let that cook for another 5 mins or so, then I added the chicken to cook. I also added a bit of chili powder & red cayenne pepper for a bit more kick. I used one can of diced tomatoes (not stewed) and I used unsweetened coconut milk. It was quite liquidy so I left out the can of tomato sauce. I also added some frozen broccoli which tasted great with this! I thickened the sauce up just a bit with some corn starch. Overall, I thought it was really good & I would make it the exact same way again. I was concerned that I bought the unsweetened coconut milk but I found that it left this dish with a hint of sweetness which I really enjoyed. I did end up adding an extra TBSP of sugar just to make sure it was sweet enough as I was uncertain. I think had it been any sweeter I may not have liked it as much so it ended up being perfect for me! I just made with white rice & it was great!
