Cheesy Stuffed Shells

I love how these shells turned out. I did substitute mushrooms for spinach though, to make it more appealing for my husband. It was really delicious. My husband liked it so much, he helped me stuff the shells the next time we made it!

Sweet Potato Potato Salad

Absolutely loved this! Next time my husband wants me to use just sweet potatoes. It was very refreshing. What a great idea- I never would have thought to use sweet potatoes in potato salad.

Classic Macaroni Salad

I loved this salad, and my husband and coworkers agreed. I made it the night before (for dinner the next day). In the morning, the noodles looked a littled dry so I just added a couple more table spoons of mayo. It was really flavorful, creamy and delicious by the time we ate it for dinner. I'm going to add cubed cheddar cheese to the leftovers tonight.

Easy Mexican Casserole

This is a really yummy and easy to make recipe. After spraying the bottom of my casserole dish, I put the broken up tortilla chips right on the bottom like the recipe suggested. I like it this way because otherwise the casserole wouldn't have a base. The chips weren't soggy, but they weren't totally crunchy either. I thought they were just right. It was great as leftovers too.

Bangers and Mash

I absolutely loved this dish! I used Irish sausage from the deli to make an amazingly flavorful dish. My British husband was impressed, and can't wait until I make it again.

Beef Stroganoff II

I added a handful of mushrooms to the frying pan with the onions. The dish was delicious- but I would marinate the beef for a few hours the next time I make this. The beef was a bit tough. The sauce was delicious though!

World's Best Potato Salad

I didn't change a thing in this recipe- and I'm so glad I didn't! Everyone in my family loved it. My husband usually hates potato salad because he finds it bland, but he absolutely loved this. I usually have to cover store bought potato salad in salt and pepper, but this was perfect right out of the bowl. Everyone complained that I didn't make enough!

Everyone loved this so much that they looked forward to leftovers the next day. The pinto beans give it a wonderful flavor. Next time I'm going to add yellow peppers as well.

Stuffed Mushrooms III

My family loved this recipe! I cooked the mushrooms in a skillet in the olive oil first. The cheese stuffing turned out perfectly golden brown. Absolutely delicious if you like pesto. I ran out of mushrooms when stuffing them though. I'd double the amount of mushrooms when buying them at the grocery store.

Beef and Irish Stout Stew

My family and myself were very unimpressed with this. Everyone agreed that it was lacking "something" in regards to a spice. I've only just starting cooking, so I'm not familiar enough with spices yet to know what to add. I've never eaten Irish stew before, so maybe it's meant to taste bland.
