I’ve been married for 27 years to a great man. I have two wonderful children, one daughter and a son; both of them are my pride and joy. I worked in a mill for 21 years until I lost my job because the mill closed down. Went back to school at 42 and got my associates degree in Applied Electronics and Computer Technology and currently work for the city in Information Technology. When life gave me lemons, I sweetened it up. Made lemon cake and took a big bite!
My favorite things to cook
I’m a diabetic but I love baking. I don’t do as much of it as I would like so when I do, it’s usually something very rich, flavorful and most times chocolate. Also, I’m always on the lookout for that great low carb desert that will satisfy my sweet tooth and keep my sugar levels from skyrocketing.
My favorite family cooking traditions
My favorite family cooking traditions was making Tortiere pies and Dynamite sauce with my mother for family gatherings on New Years.
My cooking triumphs
When I first got married, I was not a very good cook. Most things were either out of a bag, box or frozen. I have to say that my cooking triumphs are learning how to cook using fresh fruits, vegetables and spices. I love to experiment with my own combination of things and unless I make something that is 100% perfect, I usually try to tweak it a little different the next time I make it. Keeps the family on their toes when eating because they never know what I’ve changed.
My cooking tragedies
Two things I can not make are fudge and biscuits. I have been trying for years and I just can’t get it right. I’m not giving up though. I keep looking for that perfect recipe and one of these days I’ll find it.

Japanese Chicken Wings
THESE ARE SOOOOOOOOOO GOOD! My husband and I try the wings wherever we go trying to find the best in town and we thought we found them until I tried this recipe. I made them for my family tonight instead of going out and I can honestly say we will never go out for wings again. So easy to make and finger licking good, unbelievable flavor. I made the recipe as is and it was perfect!

Chantal's New York Cheesecake
Made this the other day and followed the recipe exactly with poor results, came out overcooked. Next time I'll use a water bath and instead of leaving the oven door closed for the 5-6 hours, I'll open it and let it cool that way. Flavor was good and texture was smooth but there is nothing spectacular about this recipe. Crust was crumbly too, needs to be prebaked a few minutes before adding the mixture. I'll try it again but next time adding something to bump up the flavor and adjust the cooking method to something more traditional to prevent overcooking and cracking. One more thing, I always have an oven thermometer in my oven to be sure of an accurate temp.

Creamy Rice Pudding
I’m a diabetic so I made some changes to this recipe to make it more suitable for me to eat. First, I substituted same amount of Splenda for the sugar. Second, I substituted equal amounts of Hood Calorie Countdown 2% milk for the regular milk to cut back on the carbs and third, I didn’t add the raising to cut back on more natural sweetness. Other then the ingredient substitutes, I followed the recipe exactly and it came out FANTASTIC! My family members could not taste any difference in this recipe with the changes I made and it was great warm and cold. Loved it!
