Scalloped Potatoes and Onions

I know this is a side dish, but I read a few reviewers that said they added ham. So I did the very same, then omitted the salt. OMG!! The result was SPECTACULAR!! Because I was afraid the juice from the ham would make this too soggy, I only added 1 1/2 cups chicken broth instead. Otherwise, I did exactly as directed. This is a definite meal when you add the ham. I cut mine up in large chunks, as opposed to little cubes. I did two layers...potatoes, onion, ham, potatoes, onion, ham...then more potatoes and a few onions sprinkeld on top. Served this with fresh steamed asparagus and warm, buttery sour dough dinner rolls. No leftovers!! THANK YOU FOR SHARING!!

Across the Border Tequila Shrimp

WOWZA!! This was an AWESOME Tex/Mex Tequila Shrimp recipe...and SUPER easy!! I cut down a bit on the garlic, but other than that, followed as directed. And we loved this!! Served it over a brown and white rice mix, and it was TO DIE FOR!! No leftovers!! This is a KEEPER!!

Orange Cake

This was an AWESOME orange cake...best I ever tasted, too!! Of course, I made some changes. Ha. As suggested, I used vanilla pudding instead of lemon. And I substituted unsweetened applesauce for the oil. Used orange extract instead of the lemon. For the glaze, I grated the peel of an orange, and then squeezed the juice from that orange to add as a thickner with the powdered sugar. It was a nice, thick consistancy and had a very orangey flavor. Just make sure to strain the seeds from the juice before you add it to the powdered sugar. I do have a lemon cake recipe that is very similar to this. But uses lemon jello instead of pudding. However, I like this variation a lot. Thanks for the recipe!!

Bar Cookies from Cake Mix

I made a few adjustments, but these turned out pretty nice. Instead of the butter, I added 1/2 cup unsweetened applesauce. And as someone else suggested, I added no water, but three eggs instead. I cut the semi-sweet chocolate chips in half and added 1 cup butterscotch chips, along with 1 cup chopped walnuts. The consistency of the bars was great. But I think next time, I would skip the brown sugar altogether. They are very, very sweet. Not sure if it was the sugar or the butterscotch chips, but it almost makes my teeth hurt to bite into one they are so sweet. Still, I did like the fact that it tastes NOTHING like you used a box cake mix. Which was my big concern. Will try this one again, though the sugar will be omitted next time. Thanks for the recipe!!

White Chocolate Chip Oatmeal Cookies

Loved this recipe! I added craisins, as well as the white chocolate chips and pecans and they were FAB!! Very nice chewy texture. Since I ship them to my friend in Iraq, I did underbake by one minute (or cookies get too hard by the time they get there) but he said they were still very soft and chewy when he got them. Did not last long, though...he said within 4 minutes of opening the box, his platoon had devoured them!! :) My new favorite cookie recipe!! Thanks for sharing.

Lazygirl's Ground Turkey Stroganoff

I thought this was a great basic recipe. I omitted the water and the onion flakes. Instead, I slivered one small white onion and one clove garlic, then sauteed the turkey with that. I also added about 2 tbsps. dried parsley flakesfor flavor and color, and one can of sliced mushrooms, drained, then salted with a bit of garlic salt. At the end, I added one cup sour cream, which you really need to do if you want this to taste anything like stroganoff and not just ground turkey gravy. I did like how it turned out, served it over wide egg noodles, and will be making it again. Thanks for the idea! SUPER easy to pull together.

Turkey-Lentil Chili

I thought this was a really nice recipe. I am not a big fan of pork sausage, but I did like the turkey sausage. I omitted the celery as I also don't care for celery. And I cut down on the garlic by 1/2. I love garlic, but I think you would have only tasted garlic had I put in the full amount called for. I also lightened it up a bit by adding a little chicken stock, as indeed, it is very thick. And I used sour cream instead of yogurt. But dang! This was pretty good!! Served it with warm crusty sour dough rolls, and it was a very full meal. I will definitely make it again. Thanks for sharing.
