Manjar (Dulce de Leche) from Scratch

Reviewed: Sep. 24, 2009
This was a really tasty recipe but it took over 2 hours for me, though I doubled the recipe. I started to get impatient and turned up the heat a little in the last half hour which may have helped it along. As per another reviewer's advice, I added 2.5 times the amount of sugar, so 5 cups total. I think that amount might have been too much though. I also forgot the baking soda. It turned out really tasty, thick and caramelly though.

Sean's Falafel and Cucumber Sauce

Reviewed: Aug. 11, 2009
So delicious! Non-falafel-fans were converted. We fried these to save time and some of them fell apart, but even what came off was delicious.

Spicy Slow Cooker Black Bean Soup

Reviewed: May 6, 2009
Got endless compliments on this. It helped that I did boil the dry beans before adding them to the slow cooker. It made a world of difference. Thanks for this wonderful recipe. I'll use it again!

Chocolate Peanut Butter Pizza

Reviewed: Mar. 20, 2009
The cookie doesn't taste very good on its own. I made this in a round pan which I'm not sure was a pizza pan and it worked out fine. I changed the toppings and instead of marshmallows, added banana slices dipped in lemon juice (to prevent discoloration), sliced strawberries, peanuts, and of course, chocolate chips. The pizza was a hit, but it wasn't to my taste. I think I will try to find a tastier recipe for the cookie base if I try this again. Good IDEA, poor execution.

Mango, Orange, Grapefruit, Avocado, and Pistachio Salad

Reviewed: Feb. 9, 2009
This combination of ingredients came to their best fruition when eaten together. I took this to a dinner party and it easily fed 30 people who went back for extras. I received endless compliments. I stuck to the recipe except that I doubled the amount of romaine (which substantially increased the volume), added some carrot shreds, and made my own balsalmic dressing. To the vinegar I added cumin, fresh ginger, and seasoning salt, and whisked these all with olive oil. After tossing, I garnished the salad with edible flowers. The presentation was impressive and would have been as awe-inspiring minus the flowers, simply because of the beautiful array of fruit colors. I cannot wait to make this salad again when I have the crowd to serve it to or the special occasion on which to share this delicious salad.

Vegetarian Tortilla Soup

Reviewed: Dec. 16, 2008
Tweaked this recipe a lot, but took the basic idea. It was awesome! I used dry pintos soaked overnight, 1/4 cup of taco seasoning in place of most of the spices, a tablespoon each of dried oregano and dried parsley, 5/6 cloves of garlic instead of 2, chopped jalapenos instead of green chilies, water with buillon cubes instead of broth, fresh chopped green pepper, and a little frozen mexi-mix of veggies with broccoli. I slow cooked this for ~3.5 hours on high and then set up a kind of taco bar for everyone with bowls of sour cream, cheddar cheese, home-baked tortilla chips, mexican style rice, sweet onions, cubed avocado with lemon juice, salsa, and browned ground beef for the meat-lovers. I managed to feed 15 people with the ingredients I had on hand. I will definitely make this again when I need to get rid of ingredients. I will definitely give props to this recipe for the idea and the mode of execution, as well as all the helpful reviews. It was quite delicious!

Brooke's Best Bombshell Brownies

Reviewed: Dec. 11, 2008
"This is the best brownie I've ever eaten," said one of my roommates. And these are quite delicious. I bet they'd be even better with chocolate chunks in place of the chips. I made them days ago and the one I saved in the fridge was still moist and delicious on the inside.

White Chocolate Macadamia Nut Cookies III

Reviewed: Dec. 11, 2008
These were quite tasty and only positive comments all around. However, they were a little too cakey for me. Maybe if I'd only used 1 egg plus 1 yolk and 1/2 shortening, 1/2 butter. Anyway, I'll try another recipe and come back to modify if I don't get better results.

Carrot Cake III

Reviewed: Dec. 11, 2008
Delicious and very moist! I subbed 1 cup pineapple for 1 cup oil as suggested by another reviewer. Used 3 cups of powdered sugar instead of four, and added flaked coconut to the sides of the cake. It added a wonderfully tropical twist :P

Fun Cookie Suckers

Reviewed: Dec. 11, 2008
I made this recipe with my roommates, all of them over 19 years of age. It really brings out our inner children. Delicious as well! I was really pleased with the results after adding 1/3 cup extra sugar. This would probably also be wonderful with various other extracts like lemon or other fruit/nut extracts.

Seven Layer Magic Cookie Bars

Reviewed: Dec. 11, 2008
I don't know how anyone could give this recipe a poor review! I suppose you have to like the taste of a candy bar, cause that's how rich it is. It's delicious and I got compliments from everyone who tried it. I almost got tired of explaining the ingredients and what makes up the seven layers. Thanks for sharing this wonderful go-to recipe for all of us who need a great potluck-type recipe :)

Chocolate Cappuccino Cheesecake

Reviewed: Nov. 23, 2008
What a delicious cake! Made this for a birthday party and everyone had a tiny piece (half a small slice each) and called it fantastic and rich. I subbed 2 8oz containers of fat free and 1 of low fat cream cheese for the regular cream cheese. I used low-fat margerine and low fat sour cream as well. The coffee and chocolate flavors hid any taste difference superbly. When I told people it was low-fat, they didn't believe me because each little bite was so rich and filling. However, the taste was fantastic and I received compliments all night!

Sunburst Lemon Bars

Reviewed: Mar. 13, 2008
Fabulous! I made them yesterday and they're almost all gone. I subbed a half-cup of brown sugar and 1/2 cup splenda for 1 cup white cause I had them on hand. I also ended up using quite a bit of lemon zest because someone knocked over most of the juice while I was stirring. Luckily this totally worked. In fact, it had the perfect sweet tartness. Thanks for this wonderful recipe!
