Banana Muffins II

Super Yummy Muffins – So Moist. I’ve made these several times now and they are just the best. We substituted the nuts with chocolate chips and added the 1 tsp of vanilla, 1 tsp cinnamon and ¼ tsp of nutmeg. For fluffy muffins, only mix the wet and dry ingredients until combined - moistened, don’t over stir or mix with a mixer. These have come out divine every time. This is now my go to recipe for banana muffins.

Awesome Slow Cooker Pot Roast

This recipe is AWESOME – just like its name says and perfect for a busy day. I used about a 4 lb roast and didn’t brown it. I tossed all the ingredients in the crock pot along with a can of mushrooms and chopped onion. When I came home the house smelled great; I thickened the gravy just a touch and whipped up some mash potatoes – tah dah, dinner was done. The family LOVED it and I was thrilled at only investing about 20 minutes worth of work for a fabulous dinner. Great recipe.

Easy Grape Salad

This is Yummy. The Marshmallow and Cream Cheese are perfect – sweet and creamy without being too sweet. We made the Grape Salad which is delicious and then we made just a batch of the Marshmallow and Cream Cheese with a ½ tsp of Vanilla as a dip for a large fruit bowl appetizer that had various melons, grapes and graham crackers – it was completely wiped out! Kids and Adults both loved it, and it was so simple.

Soft Onion Sandwich Rolls

Fantastic Onion Rolls! We’ve made them for burgers, pulled pork and lunchmeat sandwiches. We loved the onion flavor of these rolls so much that I will never buy them from the bakery again. I made one small change to the recipe since I do not have dried onions on hand and that was to sauté about 1/4 cup worth of onions to get the moisture out and they worked out fine every time. I also don’t have a bread machine which is simply to proof the yeast and only start out with 1 ½ to 2 cups of flour and knead in the last cup. Knead for the standard 8 or so minutes and let rise, covered, in a warm place for an hour or more and then follow recipe from step 2. They are Easy to make without a bread machine and Mmmmm are they sooooo good!

Amish White Bread

This recipe deserves all the wonderful reviews. I’m new to bread making and have tried a number of recipes but this is the one and it is really so versatile. It makes the best sweet dinner rolls and fantastic cinnamon rolls. I have also reduced the sugar and made a braded loaf, something like an Italian loaf and a regular loaf. This is also a very forgiving recipe, I started out using bread flour, but have now made it with just plain all purpose flour, I’ve added things like garlic powder and Italian seasoning and just can’t seem to mess it up – it has come out great every time. Try it as written and then have some fun with it. Kudos to Peg for such a fantastic recipe.

Lemon Poppy Seed Bundt Cake

This cake was so yummy! Quick, Easy and OH SO Moist. I used the full amount of poppy seeds and soaked them; I also used Lemon pudding mix instead of the Vanilla. I baked this little heart shaped aluminum tins for Valentines Day and drizzled them lightly with icing made from concentrated lemon and confectioner’s sugar.

Orange Chiffon Cake

We really enjoyed this cake. I didn’t have zest or orange concentrate so I substituted a spoonful of Tang for the zest and in the icing – it was yummy. I only gave it four stars because I also had sticking issues – You may want to spray or grease the pan to prevent sticking. Otherwise the cake was great.

Real Italian Calzones

I used this recipe just for the dough and it was fantastic! I made 4 calzones instead of 2 large. The family added what toppings they liked and we served the sauce on the side. These came out beautifully and were an instant HIT. Easy, Customizable and Fun - we will definitely make these often.
