Notcho Turkey Nachos

Despite a few of our guests not making it, our gathering was a huge success... though as I had suspected, there would be as many desserts as "main meal" items!  I've been silent since Thursday, as I just didn't feel that I had any thoughts of wisdom to share, but here I am now!

We gorged on turkey, a delish salad, a squash/pecan casserole, scalloped corn, dinner rolls...  Desserts were waiting... pumpkin pie, banana/chocolate cream pie and fudge!  I should have bought only diet soda!  It's a wonder that we weren't all in sugar shock!

Friday's lunch and dinner... turkey sandwiches, followed by turkey and leftovers...  Today I ate a meatloaf sandwich, and for dinner we had "White Castle" burgers...  I fear that it's time to put the turkey in the rear view mirror for a while!  Just minutes ago, I was having a craving, but for what I wasn't quite clear.  Pizza seemed to top the list, but not overly practical.  Second choice, grilled ham and cheese (who cares that it's almost 11pm?) and finally nachos made simply of cheese and salsa, as I have no meat ready made to top it with... but then, there is meatloaf...  Hmmmm...

Time to snack, I fear!  Hope you all had wonderful Thanksgiving's!  That is, if ya were a little bit crazy along the way!  Be well!

Hey Stevie - I think we had almost as many dessert items to choose from as well, but that's the norm for my family. You could have taken that meatloaf, add a little cumin to it, and crumble it up on those nachos, who knows you could have started something big!

Lela is not alone! I think meatloaf is a great follower to a feast!

Sorry, I'm not a big lover of meatloaf nor have I ever had a White Castle's. There isn't one around here. I was, however, craving Kung Pao chicken after the big day. No accounting for taste its there :)

I wondered when I didn't see any post from you, if you had OD'd on tryptophan (sp) Now I see it was the sugar. I;m glad you had a great holiday now on to the next!

Mother Ann, thought about adding some meatloaf... but enjoyed them anyway! With enough desserts, who needs side dishes? lol

Terry, hope ya found the recipe! I ground round steak since out of burger right now... and made rolls from bought frozen dough, but sure enjoyed!

Cat, no apologies... thankfully we all DO have different tastes, or we'd all eat the SAME THING all the time! I first had White Castle out of the freezer case at the grocery - they make a great snack!

Big Shots Mom... I od'd on too much prep for Thursday! then too tired to do more than stop in to check things out. Guess I should have had some of those desserts to pep me back up, lol!

Shanon, enjoy the pot pie... I've got "turkey noodle" in the oven - it sounded easier! Be well!

About Me
Started cooking many years ago, and learned as I went. First meal may have been "steak & chips" at age 15, in Birmingham England, where I lived for several years. Mostly grew up in MI, transplanted to the desert 30yrs ago, or so. Favorite cookbook is "Better Homes", also enjoy "Great British Cooking, a well kept secret." Hesitate to call myself "expert," but friends do rave...
My favorite things to cook
Italian has been my "specialty" for some time, and my "signature" meal is Lasagne, salad, garlic bread, which I first made 20yrs ago... from SCRATCH, very first time I made it. (Never again, folks...) Now start with a big jar of sauce!
My favorite family cooking traditions
Thanks to my heritage, I have enjoyed trying foods from different cultures. We still have beer battered fish, and chips of course; ground meat dishes often, chicken occasionally, pork too. I would love to submit a bean dip recipe, however, my ex who gave me the original has passed, and I have no way to verify that it didn't come from another source! I also enjoy British cooking (with a few yankee twists) and once made Plum puddings, also known as Christmas puddings, as far as I know... what an ordeal that was, but well worth the effort. Today, there is mail order!
My cooking triumphs
Greatest triumph was not too long ago, when I held a sit down dinner for 12, Lasagne being the entree. It was a fund raiser I chose to sponsor, and am proud to say that "we" raised over $1000 from that meal alone, minimum donation being $25. All proceeds collected were donated; my partner and I provided the meal and beverages.
My cooking tragedies
MEATLOAF of all things! Went through a stage of "winging" it each time, and I pulled one after another out of the oven that were almost unedible. As yet, not too big on baking... no sweet tooth here! Have dabbled, but find doughs/pastries especially difficult, perhaps as it's 90 degrees in my kitchen much of the year.
