I HATE chicken...

Well, I'm in that funk again... unfortunately I'm out of pig in the freezer (almost,) so beef is on the menu!  I fixed a chicken dish I've enjoyed in the past, a "pilaf" made with sherry/cream of mushroom soup/dry onion soup mix...  One bit of chicken, and the rest went into the L/O bowl!  Sure hope J will eat the remainder soon, or it will end up dog food, or in the trash.

I had run out of beef bouillan, but once again, buddy Rose offered to give me what she had in the cupboard... (she doesn't cook much anymore.)  I don't even have canned broth or consumme in the pantry!  On tonight's menu, chicken fried steak, mashed spuds with creamed corn.  Think I'll open a can of crm chic. soup, and dilute it for gravy...  Don't normally do that sort of thing... but then, I do have chicken broth in the freezer!  Did you know that that's part of how it was named "chicken fried?"  I never did, until the local paper printed a rec. from a local restaurant, which called for gravy from chicken stock!

So, I've thawed out a couple decent sized pieces of round steak which I will beat to death with my mallet/tenderizer, flour it, fry it (let's plug up those arteries!) and smother it with gravy!  Too bad it'll still be near 100F outside, but then, with the climate control doing it's job, it's probably 80-ish inside.  I anxiously await cooler weather... we're promised, but alas, each day, they tell us it will be days later... over, and over!

So, sooner or later, I'll come out of my "I hate chicken" mode, and get back into the groove - for a while at least.  Meantime, I'd best stock the freezer with plenty of pork!  Guess I'll have to check the grocery ads again!

So, now it's time to report on the new addition...  I'll post my fav pic so far, it's just too cute!  Pyewacket has definately settled in, simply too bad that the other kitties are still all kinds up upset and want nothing to do with their new sibling (still can't tell male/female...)  Regardless, "she's" stolen both of our hearts already!

Meantime, be healthy, be happy, be crazy!

>> "sherry and cream of mushroom soup/dry onion soup mix" that's funny. I would never think about mixing sherry and canned soup. I actually never heard of it, I hope it was good. the chicken fried stake sounds good.

How is it 100 at your house and only hit 70 at mine? Seriously! How is this possible?? Yeah, yeah, highs and lows, yada yada, but c'mon! Late Oct in Lansing v. late Oct. in Tampa? Is that fair? (all right, I'm gonna go pout now)

Oh, but Pye is such a baby cuteness thingy. Adorable, Stevie! I want to put her in my pocket.

KS, I never would have put this together on my own! Usually quite enjoyable... LL, I'm in Phoenix - mom's in Lansing... Many a time I'm freezing my "whosits" off while you're laying by the pool! I thought about popping Pye into a tote bag when I left the house earlier! Barely more than a "handful!" She's learning about teeth, claws, and bare skin, tho! Seems she thinks the dog is her mama! lol

My best friend's mom makes $77 an hour on the computer. She has been out of job for 9 months but last month her check was $7487 just working on the computer for a few hours. Read about it here NuttyRich.com

About Me
Started cooking many years ago, and learned as I went. First meal may have been "steak & chips" at age 15, in Birmingham England, where I lived for several years. Mostly grew up in MI, transplanted to the desert 30yrs ago, or so. Favorite cookbook is "Better Homes", also enjoy "Great British Cooking, a well kept secret." Hesitate to call myself "expert," but friends do rave...
My favorite things to cook
Italian has been my "specialty" for some time, and my "signature" meal is Lasagne, salad, garlic bread, which I first made 20yrs ago... from SCRATCH, very first time I made it. (Never again, folks...) Now start with a big jar of sauce!
My favorite family cooking traditions
Thanks to my heritage, I have enjoyed trying foods from different cultures. We still have beer battered fish, and chips of course; ground meat dishes often, chicken occasionally, pork too. I would love to submit a bean dip recipe, however, my ex who gave me the original has passed, and I have no way to verify that it didn't come from another source! I also enjoy British cooking (with a few yankee twists) and once made Plum puddings, also known as Christmas puddings, as far as I know... what an ordeal that was, but well worth the effort. Today, there is mail order!
My cooking triumphs
Greatest triumph was not too long ago, when I held a sit down dinner for 12, Lasagne being the entree. It was a fund raiser I chose to sponsor, and am proud to say that "we" raised over $1000 from that meal alone, minimum donation being $25. All proceeds collected were donated; my partner and I provided the meal and beverages.
My cooking tragedies
MEATLOAF of all things! Went through a stage of "winging" it each time, and I pulled one after another out of the oven that were almost unedible. As yet, not too big on baking... no sweet tooth here! Have dabbled, but find doughs/pastries especially difficult, perhaps as it's 90 degrees in my kitchen much of the year.
