Stuck in "The Box..."

I have absolutely no idea what caused me to think of this, but felt compelled to share, so here goes...
Many yrs ago when friend Denise was still in Los Angeles, and out of work, we would chat often. What about? Favorite topic: FOOD. During one of our late night chats, I must have mentioned that I was out of an ingredient needed to prepare a recipe, so I abandoned
the idea, and moved on to something else. Deni suggested that I take a look in my pantry... She continued to share that at times when she was out of something, she would search for a substitution, and went on to say that one time she needed chicken broth,
but had none. After digging around her cupboards some, she found a can of chicken noodle soup... Being a little more rescorceful than I at that time, she drained the liquid from the can... Chicken broth. While it took some years to get my brain to "work"
in that direction, I do recall needing tomato sauce, but was out... I wonder... Opening a can of stewed tom's, I poured them into the blender, and puree'd the snot out of them, and frankly, I couldn't tell the difference in the final dish! Today, I stumbled
across a recipe calling for 2 cups sliced apple, but I had only one apple. So, back to the pantry I went, and found a can of unsweetened applesauce. Would that work, I wondered? Meantime had to run to my local convenience store for some other items, and
paid a disgusting price for a red delicious, figuring that baked with my one granny smith, it SHOULD be ok... Time willing, over the weekend I will make the Apple Coffeecake to take to our new neighbor as a "welcome to the neighborhood" gift. He bagan moving
in yesterday, however the house was still having much work done on it by the landlord, so I figured I'd wait till J was off for the weekend, he being the more "outgoing" of the two of us, since I tend to be rather shy... and to give our new neighbor time to
let the workmen's dust settle, as it were!
So, I guess in the words of a popular fast food chain, "it's time to think outside the box!"
Here's to all you other "crazy cooks!" There are most likely always "crazy alternatives" in a well stocked kitchen, for whatever you may need!!
