What's for dinner?

Hi all, I know it's late, but guess this will be there next time you check in!  "What's for dinner is usually the second question after the work day.

Now, I crawl out of bed, and wake up soooo sloooow... so I MUST have some java!  This time of year, don't always want hot, but have started making "coffee ahead," to keep in the fridge.  While I was chugging some "ice coffee" early, decided on pork ribs for the dinner entree.  Rummaged around, and found some left over pasta...  Had the fixin's... pasta salad!  Threw that together before noon, adding Asian style veggies, and bottled Italian dressing.  Gave it a good douse, and let it sit to get cold, and as I say, let the flavors "marry."  Then pulled out a couple HUGE country style pork ribs out to thaw.  So, dinner was pretty much tended to, short of putting the ribs in a low oven.

As for the rest of the day, I pretty much didn't do ----.  Fiddled around the kitchen some, more doing the morning cleanup, and such, tossed some grated cheese in the freezer...  Did try a lemon bar, not too bad!  Doubt they'll last long!  Love my citrus!  Imagine one will go into tomorrow's lunch box!

If I've already started boring you... might as well leave, the theme has been set!  Did however, wonder what a Kahlua drink mixed with choc. ice cream, and maybe a douse of vodka to give it some kick, might taste like!  Guess that will have to be pondered for a while!  What would it be called?  A chocolate Russian?  (Brown Russian doesn't sound too appetizing!)  Thought the mix might taste like a mocha shake a la adults only!

So, folks, guess that's it for tonight... mostly because I live a totally boring life, don't leave home except for necessity, thus don't have much to chat about!  So, till next time, guess I'll be lazy crazy again, unless I force myself to the grocery!

Your "chocolate russian" sounds great. I don't consider myself a coffee drinker but found myself brewing a bit yesterday to freeze for a smoothie to take to the complex's pool. I add semisweet cocoa powder, sugar, etc. When I pull a serving portion out of the freezer I add a little almond milk (no dairy, here) and use my cuisinart wand to whip it up. All ready in 2 minutes! A cold little energizer to sip on. Have a great day, Stevie.

Hi folks! Always fun to get comments from others! Gives me something to look forward to other than "daily grind!" Phoenix is the place of my "casa..." Once I think I referred to it as "Casa de Starvation!" lol! (dad always called our place "starvation acres!" Better give me a months notice so I can clean the place up a little! At that, would still be a mess - lol

About Me
Started cooking many years ago, and learned as I went. First meal may have been "steak & chips" at age 15, in Birmingham England, where I lived for several years. Mostly grew up in MI, transplanted to the desert 30yrs ago, or so. Favorite cookbook is "Better Homes", also enjoy "Great British Cooking, a well kept secret." Hesitate to call myself "expert," but friends do rave...
My favorite things to cook
Italian has been my "specialty" for some time, and my "signature" meal is Lasagne, salad, garlic bread, which I first made 20yrs ago... from SCRATCH, very first time I made it. (Never again, folks...) Now start with a big jar of sauce!
My favorite family cooking traditions
Thanks to my heritage, I have enjoyed trying foods from different cultures. We still have beer battered fish, and chips of course; ground meat dishes often, chicken occasionally, pork too. I would love to submit a bean dip recipe, however, my ex who gave me the original has passed, and I have no way to verify that it didn't come from another source! I also enjoy British cooking (with a few yankee twists) and once made Plum puddings, also known as Christmas puddings, as far as I know... what an ordeal that was, but well worth the effort. Today, there is mail order!
My cooking triumphs
Greatest triumph was not too long ago, when I held a sit down dinner for 12, Lasagne being the entree. It was a fund raiser I chose to sponsor, and am proud to say that "we" raised over $1000 from that meal alone, minimum donation being $25. All proceeds collected were donated; my partner and I provided the meal and beverages.
My cooking tragedies
MEATLOAF of all things! Went through a stage of "winging" it each time, and I pulled one after another out of the oven that were almost unedible. As yet, not too big on baking... no sweet tooth here! Have dabbled, but find doughs/pastries especially difficult, perhaps as it's 90 degrees in my kitchen much of the year.
