Bacon Chicken and Dumplings

AMAZING!! Loved this recipe. Perfect for a cold day. One change I made. Substituted celery for the onion since there was someone with an allergy to onion eating it. Also, follow the recipe instructions for the dumplings instead of the bisquick box or you will end up with a LOT of dumplings :) I also added about 1/4 tsp of red pepper flakes to give it some heat. Served with mulled cider to drink. Also, I thought even 2 potatoes diced was too much, so next time I will probably use smaller potatoes or maybe just one large one. To each their own though. YUM YUM!!

Peppered Bacon and Tomato Linguine

Was great when it was hot, but I didn't care for the cold leftovers. Next time I think I will keep the sauce and noodles separate. I didn't use onion (allergic) but used half an orange and yellow pepper instead. Also added one 8oz can tomato sauce in addition to the diced tomatoes (no salt added can) to create more sauce and added some red pepper flakes (1/4tsp) to give it some heat. Didn't have basil, so I used Italian Seasoning instead. And I agree with other reviewers, you don't need all the bacon grease (maybe half) and def don't add more salt. The bacon makes it salty.

Quick Chicken Stew

Very good soup/stew. For a more soup-like texture, add chicken stock. I didn't use zucchini, used celery instead. Didn't have basil, so I used Italian Seasoning and I "marinated" the chicken with some chicken seasoning and a little bit of lemon juice to soften the meat before I cooked it. The chicken "marinated" overnight. I also used thigh meat instead of breasts, but it still tasted really great. Just the right amount of heat. It warms you on the way down, but not too spicy. Served over rice with some toasted bread to sop up the extra sauce :)

RamJam Chicken

Really, really good! The flavors are amazing! I'm sure it could be varied by the type of wine you use. I used a sweeter white. I also added a little thyme to the recipe. I combined all the ingredients for 8 breasts but only had 4 and thought I needed more marinade, so I added a bit more wine, lemon juice and soy sauce (less sodium kind). You can use the remaining marinade too. Bring to a boil on the stove and then brush on the chicken on the grill or use as a dipping sauce. The lemon juice really helps to make the chicken tender. I cut mine into cubes (frozen is easier to cut for me) then put on skewers (after marinating in a bag) along with peppers and onions. Use a bag for the chicken to marinate in so you can flip it throughout the day so it gets evenly coated. I lay mine on a dish in case the bag leaks.

Spicy-Sweet Glazed Salmon

Yum Yum! I don't usually like fish, but this was really good. The leftovers are even better too as they've had more time to marinate in the sauce. I personally didn't notice the red pepper at all. Mine turned out really sweet, but that may be because I used dark brown sugar and not light and I didn't have any red wine vinegar (nor did the store), so I used red wine instead. This is a very easy recipe too, just prepare ahead of time and pop it in the oven when you get home. I had mine with mac'n'cheese. Not very classy, but yummy and pretty good for a college student ;)

OMG!! This recipe was melt in your mouth good :) I do love the addition of the lemon (go easy on it though) and adding flour to the sauce to thicken it and using chicken stock instead of water. It was really good and I used toasted bread so I could finish up the sauce.

Anniversary Chicken I

Mine turned out really salty. I think it was the kind of teriyaki sauce I picked. Pick one with a pineapple or honey flavor in it. I also used peppered bacon I cooked myself instead of bacon bits, which added a little kick to it. Add the bacon and cheese during the last 15 min. of cook time like someone else suggested. Works great and keeps cheese and bacon from burning. I had this with a side of pears. The sweet of the pears went well with the salty of the chicken.
