Married, with 2 German Shepherds and 1 cat! We also have assorted stray cats that we feed. Oh, and the birds, squirrels, rabbits and chipmunks! I love tossing out unsalted in the shell peanuts and watching the crows come to eat them. My favorite things to cook
Chinese, italian and hot and spicy. I like making exotic things like paella and pho. I hate figuring out what to have for supper, but once that's decided I go all out. I am able to tweak a recipe to make it my own. I usually make things on the fly and eyeball everything so to ask me to write down a recipe is almost an impossibility. Very seldom do I make a recipe the same way twice.
My favorite family cooking traditions
My mother's side of the family are great cooks. Our potato salad and Thanksgiving dressing are still the best I've ever ate. I was taught to make everything from scratch, although I don't follow that rule so much anymore. Boxed cake mixes are just as good as homemade in my opinion. Unless it's chocolate mayonnaise cake!
My cooking triumphs
Homemade spaghetti sauce made with REAL tomatoes. Stir fried snow peas. I make a mean paella, pho bo, beef stew, jambalaya, and spicy chex mix. I have a super red beans and rice recipe that I made up if you look at the recipes I've saved. It'll be under 'personal recipe'. Also look for my Zesty Rhubarb pie. It's delicious.
My cooking tragedies
I have to make sure I don't overcook or undercook pastas. I'm usually off doing something else so if I don't set a timer, I forget about it!

Rubbed and Grilled Pork Loin
I made this exactly as written except it rained so I cooked it in the oven on 350. It was so good. Definitely my favorite pork roast recipe now. I was slightly scared of the coriander, and there was no reason to be. In fact, I think the coriander added a brightness to the roast. It kept the other spices from being flat. Husband liked it too, and he's not a big spice lover.

Tasty Spicy Rice Pilaf
Deeeeeelicious! Eating it as I type. I used red onion because I had one huge yellow and three small red. The only thing I will change next time is less stock. I also added some fresh parsley from my garden for the pic. LOVE the mushrooms in it!!

Mouse's Macaroni and Cheese
Super easy and the husband loved it also. I used half and half. I think this even beats my mother's recipe! As I was covering it to put it in the fridge after supper, my German Shepherd was watching my every move. So I plopped a couple cheesy macaronies into his mouth and he loved it too! Who'dathunk it!?
