Crawfish Chowder

Someone said to drain the crawfish-- I would NOT. The liquid that comes with the frozen crawfish from Walmart adds IMMENSELY to the flavor and gives a delicate pink color. In terms of thickness, the last time I made this I actually used heavy cream (bad girl) instead of the half and half. I mean, it's not diet food and it's a treat, so why not go all the way? This chowder is probably the BEST thing I have ever eaten. Truly! I use the frozen crawfish tail meat from Walmart. I use cream of shrimp soup instead of cream of mushroom, use a small Vidalia onion instead of the green onions, double the cream cheese, and leave out the corn. Just minor personal preferences but whether you make this recipe as printed or tweak it to personal taste, it is simply unbelievably good. If this were on a restaurant menu, I would be coming back regularly and probably never getting enough. Being able to save money by making something so incredibly satisfying at home is absolutely thrilling.

Slow Cooker Ham

Some will love this, some won't. We LOVED it. If you like dishes like pulled pork or a potroast that falls apart in shreds, this is a great way for you to prepare ham. It gets all the meat and flavor off the bone and there is very little waste, though you have to be willing to pick through the mass of meat and discard little bits of gristle and fat. I don't think you need to find the "picnic ham" that the recipe lists (I think it suggests that kind because it is cheaper and because this recipe allows you to get all the meat off the bone). You can use any smoked ham, alhough, as others have suggested, stay away from the spiral sliced hams. Get an unsliced one. Speaking of spiral sliced, if your idea of ham is beautiful, pink slices on a holdiday plate, this is probably not the recipe for you. For that kind of a presentation, the ham should just be heated through or glazed a bit. But if you like a pile of delicious meat to pick through that is tender, juicy, and flavorful, try this recipe. I prepared exactly as instruted except also put a few slices of pineapple on top in the crock pot (no juice) and just a sprinkle of ground cloves on the brown sugar. Neither was necessary, though.

Mock Lobster

This recipe was excellent! I think it is unrealistic to expect it to taste "just like" lobster. Of course it doesn't. But it IS a similar taste and the texture is good too. It was tender and delicious. IF your favorite way to eat lobster is diped in melted butter, and IF it is a treat that you simply can't afford very often, I think you will thoroughly enjoy this recipe as a substitute. With boneless chicken breasts on sale so often, this is absolutely a perfect way to serve them. We cooked them on a grill, and just until done, which was about 20 minutes as the recipe said, turning them often. I think the smokey flavor helped. We marinated the chicken only about two hours-- next time I might marinate over night. EVEN if you just think this tastes like chicken, it is EXCELLENT chicken. I would absolutely recommend it and absolutely recommend savoring each bite dripping with melted butter. YUM. Thanks to the person who posted this!
