About this Cook
I love to cook and love to read cookbooks. Even though I have many cookbooks of my own, I can't help but gravitate to that section every time I visit the library so I can check out one I haven't seen (and sometime one of my favorites, again!).
My favorite things to cook
My family loves any type of mexican food and we usually have it at least twice a week. I love to bake and use my bread machine to make yeast rolls if not twice, at least once a week. I like to try new recipes from this site and am trying to get better at remembering to write reviews once I do.

Pretzel Turtles
These were delicious! I used the square pretzels and I agree with other reviewrs that the hardest part of these is unwrapping the candies! You can make so many in a short amount of time. This recipe is a keeper!

Pepperoni Bread
Great recipe! I ended up making three in one day. Family said they liked it better than delivered pizza. I used french bread dough from a tube. Rolled it out and sprinkled dried italian herbs and garlic powder. Then sprinkled on parmesan cheese followed by turkey pepperoni and grated mozzarella cheese. Rolled it up and lightly brushed it with olive oil, dried italian herbs and very small sprinkling of kosher salt. After it was cooked, dipped slices in marinara sauce. I will make this over and over again!

Chicken, Rice and Vegetable Soup
Huge confession - I forgot to add the chicken to this soup! But my sister was about to start on her 2nd bowl and hadn't even realized it yet. She thought it was great without it! I did make changes: sauteed vegetables and some chopped garlic in a little olive oil before adding three boxes of low sodium chicken broth (no bouillon). Also, I always have to add a little bit of Italian seasoning to my soups and I used a heaping 1/2 cup of rice. I will definitely make again and migh even "forget" to add the chicken again. This also foze well to enjoy later.
