Hearty Vegetable Lasagna

Delicious! I loved loved loved this. However, I must admit that I made modifications based on other reviews. I also was inspired by the World's Best Lasagna recipe to modify the proportions. I replaced the green pepper with zucchini, and added grated carrots. I sauteed fresh spinach, drained it well and added it to the ricotta mixture with parsley. I also used only 12 lasagna noodles total, and 1.5 cups of sauce for the each layer. I had sauce left over, but I'll use it for pasta sauce!

World's Best Lasagna

Delicious! I've made this twice and both times the results were Amazing! I must admit, the family at my local butcher shop strongly recommended that I replace the ground beef with their mix of lean ground beef, veal and pork, so that's what I did. I was inspired by some of the reviews and skipped the salt in the sauce,used fresh basil and red wine instead of water. I also added and nutmeg in the ricotta mixture. I also tried the noodle soaking trick (30 minutes in hot tap water instead of boiling them) and it turned out perfectly!! Thank you!!

Goat Cheese and Spinach Turkey Burgers

Delicious!! I took the advice of other reviewers and used fresh spinach which I sauteed with red pepper and garlic. I also added an egg white and bread crumbs to the mixture to help it stick and threw them on the grill. Served with whole wheat hamburger buns, sauteed mushrooms, tomatoes, tzatziki and cucumber.

Black Bean Spinach Pizza

This was delicious. I couldn't get cilantro so I did without but I know it would taste even better with it. The Spinach was a great addition to the Mexican ingredients.

Garden Veggie Pizza Squares

This recipe was great inspiration for the appetizer I brought to a Christmas potluck! It was a smash success. I used Pillsbury Crescent rolls and left the dough in triangles during baking. I cheated for the cream cheese spread- I used whipped cream cheese with chives instead of doing the cream cheese ranch mixture. I highly recommend doing this- especially if you're in a rush. I topped half the pizzas with broccoli, slices of cherry tomatoes and cheddar cheese. The others I topped with red and yellow pepper and cucumber. I think the broccoli and tomato ones were more popular, partly because they looked so colorful with the cheddar on top. Thanks for the inspiration!

Penne with Spicy Vodka Tomato Cream Sauce

I made this twice; once with crushed tomatoes, once with diced tomatoes. I think it was better with diced tomatoes. I didn't like the texture with crushed tomatoes. Overall, a good recipe!

Linguine with Spinach and Brie

This recipe was amazing! I would have given it 5 starts but I made some additions based on other reviewers comments. I fried the bacon in the olive oil instead of adding it at the end. Then I took the bacon out, browned the garlic and threw spinach, tomatoes, mushrooms and italian seasoning into the pan. Then I added the brie to the pan and it melted nicely. I tossed the whole thing with the linguine. mmmmm!

Jerk Chicken and Pasta

Mmmm! I made this recipe a few months ago and liked it, but didn't think I would make it again...until I got a serious craving for it the other night! So this time I made some changes, making it even better: 1. Cut the chicken into pieces and marinated each piece with the jerk paste to give it a spicier flavour. Then I cooked the chicken in a skillet. While I drained most of the juices, I heated my sauce in the same pan, giving the sauce more of a jerk flavour. However I did omit the extra jerk paste from the sauce. (PS, I'm Canadian and I used the Presidents Choice Jerk Sauce & Marinate). 2. I sauteed yellow and orange bell peppers,red pepper flakes, peas and onions in with the garlic. 3. I added some flour into the sauce to thicken it. I also threw the chicken in after I added the cream and let it thicken a bit. I really really liked this recipe, especially with my changes!

Tuna Noodle Casserole IV

this was my first tuna casserole and it turned out great! instead of the croutons i used breadcrumbs mixed with some italian seasoning and garlic powder and i added a few chopped onions and yellow peppers.

Golden Pork Chops

Great recipe, although I did change it a bit using suggestions from other reviewers- that's why I love this site. I browned the pork chops in a skillet first. Then I sauteed mushrooms and onions in the skillet with olive oil garlic powder, oregano and italian seasonings. I added whipping cream to the pan as I was sauteeing them. I threw this mixture over the chops along with the cream of mushroom soup and baked it according to the instructions. It was soo good.

Caribbean Jerk Stir-Fry

Delicious!! This was soo good, and easy to make. I loved the combination of spicy and sweet. I did make some changes only because I was trying to work with what I had. Instead of jerk seasoning I used Presidents Choice jerk marinade, along with cinnamon and garlic powder. I also added broccoli to the stirfry. I omitted peanuts, only because I didn't have any, but next time I will add them for sure. I will make this again.Thanks!
