Hawaiian Nut Loaf

The texture is good. I used a 20 oz can of pineapple (drained like I would for frozen spinach). It didn't have a strong pineapple flavor, but I would make it again.

Pasta with Roasted Butternut Squash and Sage

We have made this several times and enjoy it, especially using pre cut squash. This time we creamed the roasted squash and onions. Better if you have people who would otherwise pick out the squash(me). We also always use evaporated milk instead of cream because of price and convenience.

This is a lot like a Sugar Cream Pie that is popular in East Central Indiana. The best ones are from Wick's or the old Durbin Hotel.

Orange Meringue Pie

I wasn't satisfied with how the pie turned out. The zest made it bitter (yes, I know not to use the white part) and gave it more texture than I care for. 2 egg whites made for a very skimpy topping also.

No Bake Peanut Butter Bars

The taste was very good, not too strong of any one flavor. My only problem was that they were so crumbly when cut. I lost almost half of each bar in crumbs. I don't know if I did something wrong but I don't think I will make them again for that reason.

John's Crabby Caps

OK, I admit that I didn't really read all the directions first. I just mixed everything together, threw it on some Portobello mushroom caps for a meal sized portion, put it in the oven topped with Provolone cheese. It was so good, fast and easy. 11/03 i have made them a few times now and they have turned out very dry when they weren't topped with the provolone.

Chicken and Mushroom Chowder

Very good. I did have to increase the chicken broth and the milk. I didn't add the milk until the end because I tend to walk away while things are simmering. I also adjusted the salt and pepper to our tastes. I will make again. Totally comfort food.

Raspberry Lemon Muffins

GREAT RECIPE. I added a lot more lemon extract than called for (I love lemon) and sprinkled the top with sugar. Loved it. My husband even gave it 5 stars and he is really particular.

No-Bake Granola Bars

As easy as the No Bake cookies. I wasn't crazy about the peanut butter in it, may leave that out next time. Also rather crumbly. I changed the raisins to a mix of dried cherries, blueberries and strawberries. Very tasty. I will make these again, tweaking the recipe a bit.
