Spiced Pot Roast

Fantastic and easy in a slow cooker! I used leftover sirloin steaks, so I didn't brown the beef, and put all the ingredients together in the slow cooker. I added carrots and red potato, substituted dried cranberries for the raisins, substituted 1/2 tsp sugar + 1/2 tsp vinegar for 1 tsp chutney, and added extra broth, salt, and spices to compensate for the potatoes. I have no idea if this is as good as the original, but it was fantastic and worked with what I had (I LOVED the cranberries). Note: Curry powder includes tumeric, garlic, cayenne (red) pepper, coriander, celery, fenugreek

Brie Cheese Appetizer

Wonderful! This was extremely easy and fast (the hardest part is cutting off the rind), and everyone LOVED it! I used a 15 oz. wheel of Brie, filled it with strawberry-rhubarb jam, and covered it with crescent rolls. Although some leaked out of the bottom, once I transferred it from the cookie sheet to the serving dish, it looked perfect! This was a huge hit at my party and I'll definitely be making this again!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Moist and flavorful - fantastic! Like everyone else, I made substitutions based on what I had on hand, and found that the recipe adapted easily. I had cinnamon applesauce, so I omitted the cinnamon. I only had one banana, so I added 1/2 cup minute oats and an extra 1/2 cup applesauce. Based on another reviewer's suggestions, I mashed the thawed, frozen strawberries (I don't like gooey fruit in my muffins). Last, I don't have a muffin tin, so I put heaping spoonfuls of the batter on a cookie tin, and topped them with oats and cinnamon-sugar. Baked for 17 minutes. Really wonderful!

Pumpkin Raisin Scones

These scones were easy to make and hard to mess up. I only used the ingredients I had (I substituted whole wheat flour for the all-purpose flour, and omitted the allspice, cloves, pecans, and raisins.) and didn't beat the eggs, and they were still fantastic! They are definitely not hard, dense scones; instead, they're soft like muffins. Perfect!
