Oatmeal Peanut Butter Cookies

These turned out super dry so much so they just crumbled apart when touched. Even falling apart I was willing to give them a shot in the taste department but they just don't deliver.

Fettuccine with Sweet Pepper-Cayenne Sauce

This is so easy and quick with a few adjustments this could very well be one of my top go to meals. I halved the amount of cayenne (my husband is not very heat tolerant) and it had just the right amount of pep. I also followed the advice of other reviewers and cut the chicken broth back to 1/2 cup, sliced up a medium onion to add to the mix and used three very large cloves of garlic. Over all the flavor was good but for our taste lacked little something..but its def. worth experimenting with to get just right for us! Thank you for a wonderful base recipe :)

Pumpkin Cream Cheese Muffins

These are awesome warm from the oven but sooo much better a few days later! They just get better as time goes. I wasn't sure how important the cream cheese mixture would be until I tasted one of these totally yummy muffins. It gives it such a great creamy texture that's somewhat reminiscent of icing..but not. I did cut out 1/2 cup of the sugar b/c I knew it would suite our taste better but I changed nothing else. Love it!!

Maple Pecan Shortbread Squares

Sooo tasty and seriously so simple it shouldn't be baking legal! I've made this both with pecans and walnuts and its equally as good to us. The only thing I really have to add is that I have started adding just a pinch of salt to the egg mixture and would like to reiterate what the other reviewers have said about the maple syrup...it must be good quality pure syrup or you might as well omit it because you won't prominently taste it. Thanks for this easy delicious recipe!

Pecan Sour Cream Pound Cake

First let me say DO NOT be afraid of using sugar instead of flour to dust your pan, it works great and leaves a great texture on the outside! Having said that, I usually try a recipe at least once following the instructions exactly (within reason) but I couldn't let myself do that in this case. Like many of the other reviewers I knew 3 cups of sugar would be too much. I used 1 3/4 cup of sugar, substituted plain yogurt (all I had on hand) for the sour cream, put the chopped pecans together with a small amount of brown sugar and cinnamon and layered it in the middle instead of in the bottom of my pan then topped with cinnamon sugared pecans.

Fake Sourdough Biscuits

The texture and taste of these rolls is pretty good considering how easy they are to make. Just know if you make the whole recipe you will not get 48 rolls unless you want flat as a pancake disks. There is no way you can make 48 actual normal sized rolls from this recipe.

Mexican Casserole

I make this several different ways adding ingredients like peppers and onions as I have them or conversely dropping them if I don't and I sometimes use Soyrizo or ground turkey instead of the chicken. This is a great simple go to dinner that can be made in a flash with ingredients most have on hand. :)

Peach Pound Cake

Pretty good, although it seems a waste to use awesome fresh peaches to make this. The flavor is just not there, the only thing it really does is ad moisture, visual interest and perhaps a textural element. Also 1tsp is too much almond extract unless you REALLY like the flavor, half that is plenty. I'm tempted to make this again using frozen peaches and instead of using sour cream (I used plain yogurt the first go around) I'd use peach flavored yogurt. Aside from that this did make a pretty tasty cake.

Crunchy Oven Fried Tilapia

Great base recipe! The bread crumb mixture did need a little extra seasoning but that's just personal taste. I also just used all bread crumbs and skipped the cornmeal. This is a wonderful healthy alternative to frying with very similar taste results!

Braised Balsamic Chicken

Delicious! We loved this served over pasta or just on its own with a big leafy green salad! One note though..if you've never tasted balsamic vinegar before you should def. try it before making this. If you're not wild about it to start with you will not like the results here at all. Cooking it down only intensifies the flavor.

Spicy Refrigerator Dill Pickles

LOVE this! So simple and easy I almost can't believe it. I had to make a few small changes to what I knew I would prefer though. I didn't have very much red pepper flake in the cabinet but I did have some dried red chilies so I used a total of 10 small chilies and all of the pepper flake that I had which was about a tsp. I didn't chop my garlic I just smashed it and threw it in and also halved the amount of sugar. These are so good they remind me of my favorite deli pickles! Update: I've also used this same recipe to pickle sweet peppers from our garden and good grief are they fantastic!

Millet Muffins

A very good healthy versatile muffin all around. These are very tasty and very easily adapted to whatever mood you might be in. I think it should be mentioned that if you are accustomed to a fair amount of sugar in your diet then these would not be qualified as sweet at all. I don't eat that much sugar and they were as mentioned very lightly sweet to me...to my husband...he said he couldn't taste sweetness at all. I very much enjoyed the different use of millet with this recipe, I'm always looking for ways to sneak in whole grains. I will def. be making these again thanks for a great base recipe!

Eggplant Parmesan II

First off I must say that I thought I HATED eggplant. Now I know I just never had it prepared properly and I LOVE it! This recipe completely opened my eyes to eggplant Parmesan! I almost had to force feed this to my husband (he had the same opinion of eggplant to begin with that I did) but after trying he loved it too, even asked if I would make it again soon he liked it so much! I did make some very minor changes by following the recommendations of other reviewers I: let the eggplant sweat for about thirty minutes then rinsed them well, I also used only egg whites to dip into before the bread crumbs and also used seasoned crumbs. I did find that I had to bake my slices for about 10 on each side in order to get them crispy but other than that the rest stayed the same. Great recipe!

Whole Wheat Snickerdoodles I

Fantastic! I just took my first bite and man I am stoked about these!!!! They are nutty from the whole wheat and just the right amount of sweetness from the brown sugar. I am a huge fan of snickerdoodles and this is a wonderful healthier version of them. Thanks for the recipe it has a permanent spot in my box :)

Irish Soda Bread

Super super super! This is so quick and easy to make and it produces such a beautiful loaf! I don't recommend you dust the top with flour, although doing that would produce a traditional looking loaf, trust me it'll be a floury tasting one. The hubby can't stand raisins so I used dried blueberries, added a tsp of orange zest and brushed the top with melted butter and honey. We've only eaten half of it and he is already requesting more!

Black Bean Vegetable Soup

Love this! This is great like it is but I've also changed it up a few times by adding a shredded chicken breast or extra beans like pinto or kidney beans. I like to serve this topped with shredded cheddar and a dollop of plain yogurt. Thanks for the recipe!
