Cucumber Sandwiches I

My mom has made these for parties since I was a kid. We use plain cream cheese for the spread and garnish with celery salt. Yum!

Phyllo Turnovers with Shrimp and Ricotta Filling

I prepared the shrimp mixture for a party, but there was too much food, so instead I saved the shrimp mixture and tossed it with pasta the next day. It was awesome! It was so good I made up little containers for others to try. I will be making this again for pasta - I can't wait to try it with the phyllo though!! It must be amazing.

Pickle Rolls

I don't use tortillas. I just spread the cream cheese on the ham, roll a pickle up in it, skewer with toothpicks, and slice up!

Sugar Coated Pecans

The salt really makes this recipe. I used a generous amount of ground sea salt. If it was just sweet, it would be okay, but the salt makes it great.

Bacon Wrapped Dates

I hardly noticed the cheese in this. I do not think it is worth the effort of stuffing the dates with cheese. I tried both this recipe and some chevre (goat cheese) and both times the cheese seemed to disappear. I used maple bacon which made a nice aroma and did not make the dates too sweet. I also wrapped the dates with a whole slice of bacon instead of a portion of a slice and they were very good.

Apple Crisp II

Made this recipe twice and was pleased with the results. The first time came out too watery and not as flavorful as I like. The second time I used half the water and added a pinch of salt and some crushed pecans to the topping and it came out better.

Chicken Cordon Bleu II

The sauce was pretty bland. Too much cream, not enough wine flavor. Added a lot of salt to make it decent. The sauce broke after I took it off the heat. I wouldn't make it again for myself. I wanted something more flavorful but it tasted really plain.

Buffalo Chicken Dip

I tried this recipe because it had so many good reviews. But, I am not so sure about it. At the party, I put it in my mini slow cooker and put it in the corner. I did not like it at first. Finally, after 3 hours of cooking, it started to not taste or smell funny. I think it was the canned chicken that made it strange, and that just had to cook off. In the end, it tasted okay, but the beginning of it I was sure it was not going to work out well.

Frijoles a la Charra

This had excellent flavor. I will be honest: I used canned beans in a saucepan instead. Either use quality bacon or chop your cheapo bacon up really finely. I worried unnecessarily about the saltiness before I added the beer. I had to cook it longer to reduce the beer down and next time will add just half a bottle. I liked the heat that the pickled jalapenos added to the beans, though I tended to leave all of them at the bottom of my bowl. I liked that the heat did not overpower the dish but was still detectable. I really enjoyed the flavor in these beans. I will make this again.

Strawberry Spinach Salad I

Excellent recipe. I now make the dressing in tupperware and keep it in the fridge to use every day. I substitute the olive oil for sesame oil. I toast the sesame seeds. These steps bring a great nutty flavor to the dressing that I love. I use Splenda instead of sugar. I have tried both minced onion and finely grated onion; it is good both ways. I omit the poppy seeds because I don't see a need for them. Please try it with sesame oil; you will like the results.
