Oatmeal Carmelitas

Double the recipe and make it in a 13X9 pan. They go so fast that is the only way I can make these around the house. These hands down are my Grandson's favorite bar cookie, every recipe is based on the question "is it as good as an Oatmeal Carmaelita Bar?". I am begining to wonder if these will be the Grooms cake at his wedding...I hope that is many years away but the thought does cross my mind ;)

Cranberry Streusel Pie

About 2 years ago this recipe showed up in the pie countdown and I thought I would try it for Thanksgiving. Amazing! I love the tart flavor, it's a bit of a break to the rest of the sweet things offered this time of year. It is sweet but not "toothache" sweet. The topping is wonderful and I have used it on other pies. I used pecans rather than walnuts and I have also used almonds. The almonds are great with the cranberries. Many people think that the pie is a cherry cranberry combination anyway so the almonds fit perfectly with the flavor profile.

Red Skinned Potato Salad

I do not know how another recipe I reviewed ended up with this one but...This is a great potato salad recipe. Forget what I said about a cake being an Epic Failure it was but that has nothing to do with this recipe! This is going to be a requested recipe for most gatherings. Now I have to go find the cake recipe and find out what review ended up there ;)

The Best Lemon Bars

Add the zest of the lemon as well as the juice for more flavor. I ground some toasted coconut until it was pretty fine. I used 1/2 Cup of the ground coconut and removed 1/2 Cup of flour for the crust. Great flavor, I may "play" with the crust a bit more. May try processing the sugar with the coconut to get the sugar a bit finer as well.

Pineapple Angel Food Cake I

There is a very VERY important thing to note about this cake... THIS CAKE CAN NOT BE MADE WITH THE TYPE OF CAKE MIX THAT HAS TWO BAGS. My cake was an EPIC failure. I removed a hockey puck from the pan. I will try making it again as I have had this cake before and I like it but I will have to make sure I look at the package instructions before buying the cake mix.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I have been "sitting" on this recipe for about 1 year. I have given it to people but had not made it until last night. Super easy. Fast and I was quite surprised at how good it was. I made a ganache just in case the cake was a bit dry. I did not have to use it although we did just cuz ganache is so darned good! My niece is one of many that can not have wheat and this was for her birthday and it did not fail. Now I am wondering how it would be with dark chocolate chips rather than semi sweet....and maybe white chocolate I am just concerned about the color with white chocolate (any ideas would be welcome)

Camp Cornbread

I have been making cornbread like this for years. I do not add the sugar but I do add a minced jalapeno pepper or two and a hand full of cheddar, colby or pepper jack cheese. I think the corn has a lot to do with the moistness of this.

Triple Layer Cookie Bars by EAGLE BRAND®

I guess I can't leave well enough alone... I started out making these exactly as written but just before pouring the chocolate over the top I though to myself..."self I bet some toasted almonds would taste real good under the chocolate" so I did what I commanded and chopped and toasted some almonds. Now these are great but I am wondering if next time I should use almond butter. Will be processing almonds next time. Maybe even some for the crust. By the way they are great with the almonds!
