Delicious and Easy Mock Risotto

Reviewed: Feb. 15, 2009
Great recipe! Super fast, easy, and yummy! I took another reviewers advice and added 1/2 cup of cream w/ the stock. I also added mushrooms w/ the onions and garlic and a hand hull of parm cheese near the end. Also, as w/real risotto I had to had a bit of stock near the end. Risotto w/out the fuss!

Spicy Baked Cod Fillets

Reviewed: Feb. 17, 2009
I am so glad I found this recipe. As the editor's note suggested I used a jar of ready made masala I already had (you can find it in almost any grocery store.) I always have it on hand and use it for a quick super w/chicken. I never knew how amazing it would be w/ fish! I only used a 1/2 the jar to marinade the fish and followed your baking instructions! Best Cod I've ever hand! And definatly not boring! Served w/ basmati rice, it was perfect!

Quinoa and Black Beans

Reviewed: Feb. 23, 2009
A great way to liven up Quinoa. I added a red bell pepper in w/ the oniona and didn't mix the cilantro in but just garnished w/ it. Next time I would add a 1/2 teaspoon more cumin and some dried chilli pepper flakes.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Feb. 24, 2009
Very Good recipe. I used non-hydrogenated margarine instaed of butter and can definately taste the difference. Next time I would use butter! Also 2 cups of chips was way too much for me, more chocolate then batter! Next time 1 cup would be perfect! Also, I used a whole wheat/ white flour blend and it worked perfectly.

Impossibly Easy French Apple Pie

Reviewed: Mar. 3, 2009
I used a small pyrex dish instead of a pie plate. Also I upped the apples to 4 cups. Everyone loved it! It's more of a custard or buckle then a pie. I've already been asked to pass on the recipe!

Impossibly Easy Breakfast Bake (Crowd Size)

Reviewed: Mar. 14, 2009
Great recipe, but I had to be creative with the ingredients! I used bacon, cooked but not crispy. I had no frozen hash browns so I boiled some potatoes till still slightly hard and cut into small cubes, and used low-fat mozzarella instead of chedder. It still turned out super yummy!

Banana Oatmeal Cookies II

Reviewed: Jun. 15, 2009
AWESOME! Use these changes for perfect cookies! replace 1cup whole wheat flour for the white, cut the sugar down to 1/2 cup. add 1 beaten egg white with the egg. this while help the dough from getting dry and will help them rise. flatten cookie on cookie sheet(they will rise). bake 10 min. Rasins work as a good sub. for nuts. suggestion: if you really want a banana tase sub 1/2 vanella extract for banana extract. ENJOY!

Iced Tea II

Reviewed: Sep. 1, 2009
I never made iced tea before. This worked great! I used 1/4 lemon juice and it was just tart enough. For those who aren't sure, reg. tea such as lipton, red rose, etc., is orange pekoe. Orange pekoe is a the most widely used black tea.

Sweet and Sour Meatballs II

Reviewed: Nov. 19, 2009
OMG! Want a super easy diner idea?! Use pre-made frozen meatballs! Defrost/brown in pan, mix and pour on sauce(I also use white vinegar), add frozen peas and thinly slivered carrots if you want, simmer 15-20 min. and serve with rice! Excellent sauce!

Easy Batter Fruit Cobbler

Reviewed: Nov. 26, 2009
Love it!! Takes minutes to put together...the hardest part is the wait! my son loves this. We've tried many different combination of fruit and using a mix of frozen blueberries and raspberries is our favorite. Oh! last time I used brown sugar instead of white and sprinkled 1 teaspoon vanilla sugar(sugar we have vanilla beans in to flavor).

Blueberry Oat Cookies

Reviewed: Nov. 28, 2009
These cookies worked out nice. A few pieces of advice. When using berries(frozen or fresh) toss in a bit of flour before adding them, it will minimize the bleeding of the blue color into the whole cookie. Also just gently stir them in w/ a wooden spoon. This will also help from spreading too much color. To answer one reviewer, if you would like to incorporate flax into your cookies ground flax makes an excellent egg substitute. I use it almost exclusively in cookies and muffins. Just add 1 tablespoon ground fax to 3 tablespoons water (this is equal to 1 egg) let sit about 5 min. and vola! perfect egg substitute and healthy cookies! Oh, whole wheat flour works great in these cookies.

Amber's Sesame Chicken

Reviewed: Dec. 7, 2009
Pretty good. The Chinese spice is a must. Chinese spice can be found at any ethnic grocery store for about $2/$3. It consists of cumin, cloves, cinnamon, and anise. I wouldn't recommend mixing it yourself because of the strong flavors. I also doubled the sauce recipe and had to thin it out. I used a mix of more teriyaki sauce and water. I replace red pepper and served this with brown rice i cooked in chx stock.

Colleen's Slow Cooker Jambalaya

Reviewed: Dec. 9, 2009
I really don't know why this has such a high rating. this does not resemble a classic jambalaya. I was skeptical about the rice not being added and was right. In a classic jambalaya the flavors are strong and the rice has soaked up the tomato juice. This recipe was soup and I DO NOT recommend this.

Black Bean Vegetable Soup

Reviewed: Feb. 13, 2010
Very good! I also changed things up a bit. Used only 2 cups vegan 'chicken' broth, used canned diced tomatoes instead for a chunkier texture and added more cumin, chili powder and some paprika as it cooked. Served with a great artisan bread (a whole wheat crusty bread). My 19 month old loved it!

Watermelon Fire and Ice Salsa

Reviewed: Jul. 6, 2010
Great summer salsa and a great way to use up extra watermelon! I left out the hot pepper because of my two year old and added garlic instead of garlic salt. I also sprinkled in a bit of sea salt. Served with grilled Halibut!
