Kevin's Sausage Dip

I'm rating 4 stars because I don't do it exactly this way... but same idea/base... I make what to me is a 'double batch' -- I get 1lb. of regular sausage, 1lb. of hot sausage. Cook it in a frying pan, (use a potato masher to stir/break it up, works great,) drain off all the grease. Throw that in a crock pot with 2-8oz. Bricks of 1/3 less fat Neufchatel/Cream Cheese (To those of you that said Lite - BAD idea, it works absolutely perfectly, I never use full fat cream cheese anymore, even in cheesecakes it comes out great - the non-fat is a different story) And 2 cans of Rotel/Diced Tomatoes with Chilis... throw it in the crock on High til it bubbles, turn it to low and leave out for the party!

Buffalo Chicken Dip

Always a hit... but I prefer fresh chicken to canned. DO NOT USED CANNED - TRUST ME... I take 2-3 Skinless Boneless Chicken Breasts and just poach/boil them in salted water and shred them with a fork... makes this 1000x's better!!!! Trust me! I make this all the time and everyone loves mine.... Also to cut on fat I use the 1/3 less fat cream cheese, you never know the difference... and I use SHARP cheddar... spread it in the pan and then put some crumbled bleu cheese on top and lightly mix/swirl it in.... To the reviewer that took the time to layer it to not get the 'unappetizing' orange sherbet look... good for you, but I triple batch this for parties and it's always GONE! Even with it's color...

Banana Coffee Cake

Great Recipe! Very Moist & Delicious... used 3 Bananas which was slightly over a cup, I would probably up that to 4-5 next time (or about a cup and a half) -- I also had to bake it for 40 minutes, when I checked at 25 only the edges were brown and the middle was def. not set. For the topping, I used 1c. Chopped/Food Processed Pecans, 1/2c. Butter 1/2c. Brown Sugar & about a tsp. of Cinammon. Put on top and bake... Delicious!
