Authentic French Meringues

I had made creme brulee for my husband and was left with 4 egg whites - what a perfect answer this was since I am from the "waste not" generation. Room temp egg whites made them whip up faster and the confectioners sugar must be the answer since these are the best meringues ever. Thanks for this one!!

Butternut Squash Soup

Now this is GREAT soup - I used 4 oz of cream cheese and 1/2 cup fat free yogurt, but I'd love to try the 2 8 oz pkgs of cream cheese - but my waistline said no! (Though I may do it next time!!)

Best Unsteamed Shrimp

My husband thought this was just excellent and he is a true shrimp lover who prefers shrimp battered and deep fried. I didn't use the microwave because mine cooks hot and felt I had better control in a saute pan. Reduced Old Bay seasoning just a little.

Awesome recipe - I think others are missing the point of CLARIFIED butter. You can saute/fry at very high heat with clarified butter. This is a keeper.

Oven Brown Rice

Great recipe. I bake covered for the first half of baking time, then uncover at the end. I often make a double batch and freeze some for later. I use garlic powder instead of salt to reduce salt content.

Lemon Zucchini Bars

Light and lucious - Didn't peel the zucchini which left the bars with "green things" but didn't affect the taste. I freeze the correct amount of grated zucchini with the lemon rind and during the winter I've got a head start on these bars!!

These are the best chocolate chip cookies ever! I was raised with 3 brothers, raised 2 boys and married the "cookie monster" so I've tried every recipe ever devised. These are perfection!!

Roasted Brussels Sprouts

Only tried this recipe because of the other positive reviews. Everyone was correct - I didn't make them dark brown at first - eased my way into it. Crave these just like others said! Keep thinking I'll try another recipe for brussel sprouts but never do!!
