Banana Cake VI

I am famous in my neighborhood for this cake. People ask me to bake it for their birthdays and I try to do it whenever I can. Use caramel frosting IV and you'll have people not exactly begging you for the recipe but asking you to make it again. And again.

Oatmeal Raisin Cookies IV

I'm giving this 5 stars because most oatmeal cookie recipes are bland. That being said this one desperately needs 1 t. salt, under-baking slightly and like all cookies, will benefit from chilling the dough (chewier, denser cookies). I added chocolate chips and wished I'd halved or left out the raisins. Also, my cookies were not flat but I always use a half and half mix of "white" whole wheat flour and regular white flour for all my cooking so that might have changed the outcome. Dark brown sugar gives a fuller flavor. If nothing else, add the salt. It will make these cookies ideal.

Best Toffee Ever - Super Easy

I am a very experienced cook and this recipe is my Achilles heel. It has taken me as many as 5 tries before it works, although when it does, it's amazing. The only problem is that although I try all the tips in the reviews, I end up with a gritty mess that seperates at the end of the cooking process. My new thought is that I am letting it boil too hard. So, I'll probably give it one more shot because this holiday season, I've wasted 4 lbs of butter and 8 cups of sugar but I'm determined to serve this along side my New Year's eve feast.

Chicken Chimi in the Oven

I added some brown/white rice that I had leftover and also put half regular salsa and half Costco mango salsa, which gave it a sweetness. I have a daughter who is sensitive to spicy foods so I halved the chili powder and added some smoked paprika, which I add to almost all the tomato based sauces I make (except Italian) for a smokiness that really adds a lot. I know this sounds like a lot of add-ons but if you made this as is -- it's a great meal. Try Tortilla Factory tortillas. To me, they are the best tasting you can buy (at least in Seattle) in a supermarket.

Spanish Style White Bean and Sausage Soup

Very good winter soup with lots of protein. Beans will NOT cook in the amount suggested. Add a few more hours of simmering. Works well in a crock pot but start early. Delicious.

Taco Soup VIII

Good basic recipe but like the other reviewers, I think this sucker needs some tweaking to bring it up to 5 stars but that is a great blueprint to customize. It's too thick. I thinned with mixture of chicken broth and beer. Also, adding canned chopped green chilies, (mild) gives a nice flavor. I use ground turkey which I think is a better flavor. Other garnishes are sliced olives, sour cream and chopped tomatoes, which are also good in the soup.

Slow Cooker Chicken Taco Soup

Fabulous recipe and a bit more sophisticated than some of the other taco soups. One caveat: Beware the chilies in the diced tomatoes. I bought some that were so spicy it wrecked it for me. I like some mild heat but this was over the top. My husband liked it but make sure it's a brand you've used before!

Laura's Quick Slow Cooker Turkey Chili

Okay, first of all I do not do the whole canned soup thing in recipes. I substitute tomato or marinara sauce, add some canned tomatoes and this is a great recipe. I also add a little red wine OR barbecue sauce (smoky) to cut the acid, which makes it a bit deeper and complex.

Easy Texas Chili

This was, as billed: easy, delicious and classic. I omitted the chopped chili for the younger members of the family and left it simmering on low for the afternoon and it was delicious. Perfect for a rainy Seattle fall day. Not that it rains here...

World's Best Lasagna

Delicious classic lasagna. I left out the fennel once for a slightly more kid-friendly version and only put in 1.5 T sugar because I thought 2 made it a little too sweet. I always like a little red wine in my red sauces so I added a bit (less than a quarter cup) which deepens the tomato flavor. Overall, even if made exactly as the recipe states, a sure fire crowd pleaser. My neighbors raved.

Classic Peanut Butter Cookies

Although the cookies baked up nicely, they didn't taste much like peanut butter. I like The Joy of Cooking recipe better. It makes a denser, more "peanuty" cookie.
