Eggplant Parmesan I

Reviewed: May 10, 2014
We really enjoyed this dish. An easier and lower fat / calorie way to precook the eggplant is to spray it with oil or brush a little on, then put it under the broiler until it browns. Turn the slices and repeat oiling and broiling. I've never found it necessary to rub with salt first. I also substitute cottage cheese, whizzed in the food processor for the ricotta.

Lamb Cobbler

Reviewed: Feb. 5, 2014
Made this tonight. It was delicious. To cut the fat, I dry fried the lamb, then added the onion, cooking a few minutes to soften, then poured off the fat before adding the garlic and other ingredients. I added the peas frozen. (We get them in bags in the UK and the peas have been frozen individually, so they pour.) Like other reviewers, I couldn't get the number of scones at the stated thickness and needed to add a little more milk to make the dough workable. Fewer scones meant bigger gaps, but there were still enough to go round. I also substituted cheddar cheese, because my husband doesn't like Parmesan. We really enjoyed this as a nice alternative to Shepherds Pie. Will make again.

Tiramisu Layer Cake

Reviewed: Mar. 25, 2013
This is a delicious cake, much enjoyed by all my work colleagues! Thank you for sharing the recipe. I used a homemade white cake recipe but with three layers, they ended up being quite thin. This was ok due to the richness of the filling and frosting, but I'd double the batter next time. In deference to a Muslim colleague who doesn't consume alcohol, I substituted 1 teaspoon of Rum flavoring and 2 teaspoons of coffee essence (we get one in the UK called Camp Coffee). This worked out very well.

Jumbo Breakfast Cookies

Reviewed: Sep. 12, 2010
We love these! They bake well and taste great. They are more like a cookie than breakfast, but we eat them with coffee in the morning just the same.

Clone of a Cinnabon

Reviewed: Sep. 12, 2010
I have baked these dozens of times in both the US and UK, with excellent results every time. I've shared them with loads of people. Everyone agrees they are fantastic! It's important to roll the dough around the cinnamon filling as tightly as you can. Thanks for sharing this recipe.

Layered Beef Casserole

Reviewed: Sep. 12, 2010
This recipe was excellent and very easy. We had lots of fresh potatoes, peppers and tomatoes we grew ourselves. I substituted thick instant gravy for the tomato sauce and put chopped fresh tomates on top, before sprinkling with cheese. It was delicious and we will certainly have it again.

Fruitcake Bars

Reviewed: Jul. 21, 2009
Simple, tasty bars that are very fruitcake like. I substituted half brandy, half orange juice for the apple juice and added 1/2 teaspoon of nutmeg. They baked up glossy, so didn't need any glaze. I think 48 servings is optimistic. They are thin (which is fine) so I cut 24 to suit our appetites, 32 would have been possible.

Light Oat Bread

Reviewed: Mar. 11, 2008
We bought a bread machine 2 1/2 years ago and haven't bought a loaf of bread in all that time, so I'm always on the look out for tasty bread machine recipes. I discovered this recipe last month and haven't used another one since! I substitute half brown flour, which gives it a richer taste. When the power went off over the weekend, it was about 1/3 of the way through the cycle. When the power came back on, I reset the machine to the 'Rapid' setting and it finished off beautifully.
