My favorite things to cook
I love baking cakes and cookies! My favorite recipe is 'Tennessee Coconut Pound Cake' which was originally from my Sunday School teacher when I was a child, then my grandmother and now me.
My favorite family cooking traditions
Well, my mom doesn't enjoy cooking, but my grandmother was a great cook. Good old southern cornbread and biscuits to accompany pot roast.
My cooking triumphs
A few years ago, I won 'Britain's Finest Fruitcake Recipe Competition' and was featured in the UK's Good Food magazine.

Eggplant Parmesan I
We really enjoyed this dish. An easier and lower fat / calorie way to precook the eggplant is to spray it with oil or brush a little on, then put it under the broiler until it browns. Turn the slices and repeat oiling and broiling. I've never found it necessary to rub with salt first. I also substitute cottage cheese, whizzed in the food processor for the ricotta.

Lamb Cobbler
Made this tonight. It was delicious. To cut the fat, I dry fried the lamb, then added the onion, cooking a few minutes to soften, then poured off the fat before adding the garlic and other ingredients. I added the peas frozen. (We get them in bags in the UK and the peas have been frozen individually, so they pour.) Like other reviewers, I couldn't get the number of scones at the stated thickness and needed to add a little more milk to make the dough workable. Fewer scones meant bigger gaps, but there were still enough to go round. I also substituted cheddar cheese, because my husband doesn't like Parmesan. We really enjoyed this as a nice alternative to Shepherds Pie. Will make again.

Tiramisu Layer Cake
This is a delicious cake, much enjoyed by all my work colleagues! Thank you for sharing the recipe. I used a homemade white cake recipe but with three layers, they ended up being quite thin. This was ok due to the richness of the filling and frosting, but I'd double the batter next time. In deference to a Muslim colleague who doesn't consume alcohol, I substituted 1 teaspoon of Rum flavoring and 2 teaspoons of coffee essence (we get one in the UK called Camp Coffee). This worked out very well.
