Steff's Shepherd Pie

I didn't use cream of mushroom soup, and used ground turkey rather than beef. Also used onion powder (along with garlic and pepper) to season the meat. I flavored my mashed potatoes with hot curry powder-- YUM, that added a wonderful taste (and smell!) To moisten the mashed potatoes, I made them with the appropriate amount of water and milk, then added about 1/2 C chicken broth. This counteracts the need for any creamed-soup (+ makes it dairy free and cuts the calories.)

Honey Crystal Almonds

Used a vegan shortening for the butter and splenda mixed with 3 packets of truvia sweetener & sea salt for coating. I left half the batch of almonds in the honey mixture for an additional 3-4 minutes, and they turned out so much better than the first half. Following the review, I dumped the mixture onto parchment, slightly cooled, and then tossed with the sugar mixture. Excellent!

Vanilla Berry Parfaits

You can make this so many different ways. I had no yogurt, so I put shredded coconut on the bottom, layered with frozen (thawed) mixed berries and whipped topping, topping it off with cinnamon. I made another one using Kashi Crunch cereal in between layers- so good.

PERFECT. This works with soy milk, which is what I used. My grandpa is a linguist and has done quite a bit of service in Finland, he knew exactly what this was when he saw it. I had some trouble in the mixing process-- no bread mixer, so didn't get as much beating into it as hoped, but it didn't cause any problems. 2nd stage of rising I put it in the oven @ 170 degrees F for about an hour. Beautiful bread. Oh, I cooked only one loaf at first, and it does NOT need 30 minutes.. it started getting too done at 24, I'm guessing 20-22 would've been even better.

Needed to send these to missionaries in Africa, and thought this recipe would work. Really don't know what I did wrong, and they're overly soft. Also, I tried one and it tastes just like brown sugar.Texture-wise I'm wondering if it has anything to do with the creamer I used.

German Chocolate Cake III

I didn't make the frosting (pecans are SO expensive, who knew?) but did make the cake. It was good, but for all the work.. I don't know. I wasn't super thrilled. Not too different from baking a simple cake-mix, but I'm sure the frosting really makes the cake, so maybe I'm not one to rate this. If I make it again I will def have to make the frosting recipe as well.

Norwegian Pancakes - Pannekaken

I had to add a tsp of oil to my ingedients after ruining the first one. Also added a tsp of cardamom. Turned out great. I didn't taste them, but those who did thought they were delicious. Update: I tried one, and 1 tsp of cardamom is way too much for my taste. I second the notion that you should be very careful if you add that spice. I've never been a fan of it outside of certain breads. But since the recipe doesn't actually call for the spice, it still deserves 4 stars.

Pistachio Cream Puffs

I didn't try these personally, but I made everyone else rate them from 1-5, and every person gave them a 4. Hence the rating. I also give the recipe a 4 because it's so easy to make. The only problem is that right after they come out of the oven, it's easy to ruin the top shell, I think they need about 5 min to cool before cutting them in half. Great recipe, though, and yes, they are quite large.

Vegan Lasagna I

Awesome recipe, but am giving it 3 stars because it could have been better. I didn't have to use all of the tofu mixture-- used 1 lb silken and 1 lb firm tofu. As for the tomato sauce filling, I had a bit of a disaster and for the top 2 layers had to use cans of stewed tomatoes on their own (rather than simmered with the other ingredients), which is probably why it came out so watery even after 40 minutes in the oven. HOWEVER, the next day it is so much better, everything is held together and tastes good, just lacking a particular flavor, maybe soy cheese would help. Over my 3rd tofu layer I sprinkled garlic powder everywhere (yum, that helped.) All stewed tomatoes used were an Italian blend. I also used whole wheat lasagna noodles and am glad it turned out. You definitely do NOT need to use much spinach, I used about half of a 16oz pkg. I've made this once before- a worse experience, and am going to keep making this until I perfect it! PS: non-vegan, tofu hating people can't tell this is made w/ tofu. They like it a lot. :]

Award Winning Soft Chocolate Chip Cookies

I feel bad giving these only 2 stars, because I did make changes. I used "I can't believe it's not butter" and a brown sugar/splenda mix. Also, I used SUGAR-FREE + FAT-FREE pudding, which I wondered about.. not sure if that's what made these weird, but these are a strange texture. Soft in a gross way. Others ate these right up, but I had to alter my second batch by adding 1/2 cup peanut butter, more sugar, a pack of m&m's, and a bit of baking powder. These were supposed to be for other families, but they're just not good enough to give as gifts. I promise to make these to the T next time, and will change the rating if they're honestly good.

Hmm.... why on earth does the middle layer have mayonnaise?? I don't understand it's purpose, you can taste it. Next time I will definitely leave that out. I did alter it (used strawberry soy yogurt, extra mini marshmallows--about 1.5 cups + lite miracle whip.) Perfect texture, and very pretty, but never again will I put any kind of mayo in it. The marshmallow & jello mixed together + either cream cheese or yoghurt probably would have been just fine. Next time.. (which there will be, it's good enough to make again.)

Lemon Zucchini Bread

I wish I could review this without rating, because I made alterations which probably contributed to the taste. I used whole wheat flour, splenda, & applesauce rather than oil. It tastes strongly of the ww flour, sadly. Everyone besides me ate it and liked it.

Black Bean Brownies

Several people I know would never consider giving these a 5-star rating, just because of the black beans. I did not use instant coffee and was able to taste a hint of black beans. For me, the health-woman, I found them to be the best brownies EVER. I loved the texture. Other people, those who would give an honest opinion, said "these are weird, why does it have this texture?" As for me-- my new favorite brownie. Update: people love these! It tends to be the people who enjoy being healthy & like the taste of "healthy." I don't think I'll ever make brownies with flour again!

Asparagus Chicken Crepes

These are pretty much... enchiladas. Which if you're into, you will love these. But if you're expecting delicious French food or a European delight, these are not them. The simple crepe recipe was fantastic, though!! Crepes in general are the best. But I probably won't make this again... sorry recipe inventor! My boyfriend enjoyed them. But I'm sure he would've loved several things much more than this.. (made for his b.day, so was esp disappointed, I was just expecting different, not enchiladas.)

Cream Puffs

Mine didn't rise too much, but enough to fill. I also had no parchment paper so had to put them on slightly greased pans. The bottoms did burn, but I was convinced to still bring them to a family event. Sure enough, they were gone in an instant. Even with burnt bottoms! I was thrilled, but will definitely use parchment paper next time.

Instant Pistachio Salad

SO easy. Next time I'll add chopped walnuts and that's all it needs. I used both sugar-free pudding and sugar-free whipped topping. And call me crazy, but I found this to be especially delicious when I dipped those square-type pretzels in it. Try it.. I dare you.

Addictive Sweet Potato Burritos

Delish! I had a "phew" moment after reading reviews. All I had were black beans and didn't know if they'd be any good, luckily so many reviewers used the same thing. Some people didn't finish theirs and said "Um, they're interesting..", others loved them, as did I. I'm sure I'll be making these again, next time I'll put in the soy sauce, which I omitted this time due to its sodium content. Everyone should at least try these.
