No Bake Bumpy Peanut Butter Nuggets

Hmm.. I've had peanut butter balls before, my mom used to make them with us years ago, but they honestly were much better than these. Her recipe uses honey & grape nuts cereal, this recipe seems to be lacking a certain something-- for my personal taste, anyway. Haven't gotten other people's verdict yet.

Magic Peanut Butter Middles

I didn't care so much for these, but everyone else loved them. I had no problems with either the dough or filling, I did add 1 tsp of non-dairy creamer to each, and I used all natural PB (no sugar) which had been in the fridge, so was very firm, no problems with stickiness. Fun cookie!

Delicious Black Bean Burritos

Delicious! I didn't have red pepper on hand, and used cayenne pepper-- turned out VERY spicy, but we love it that way.

Lemon Zucchini Bread

I wish I could review this without rating, because I made alterations which probably contributed to the taste. I used whole wheat flour, splenda, & applesauce rather than oil. It tastes strongly of the ww flour, sadly. Everyone besides me ate it and liked it.

Easy Chocolate Tofu Pie

With some work, this could be good. Mine took much more than 1 hour after cooking to reach a firm texture, even had to stick it in the freezer. Personally, I found this to be pretty gross (bitter), & I usually love tofu treats. The vegans who ate this thought it was GREAT- it was gone in a flash. However, it's just missing something. I think I'll add toffuti cream cheese & add something to even out the chocolate taste. I did use 3/4 white sugar and 1/4 splenda, but I'm quite sure that wasn't the problem. Will make again in the future with some adjustments.

Turkey Gyros

Mine turned out pretty bland-- I didn't have any dill, which may be part of the problem. Also used ground turkey. Seasoning was lacking big time and the taste was nowhere near a real greek gyro, but it was good enough that I'll keep trying this recipe. I'll just have to experiment with seasoning amounts and make sure to use the dill. Everyone else who ate these put cheese on theirs and loved it-- some even ate two.

Tart Lemon Triangles

I used 1/2 white sugar, 1/2 splenda, and it worked perfectly. I made with a different crust (oatmeal based) which was ok, but I'll have to try this recipe's crust next time. Delish.

Caramel

Needed to send these to missionaries in Africa, and thought this recipe would work. Really don't know what I did wrong, and they're overly soft. Also, I tried one and it tastes just like brown sugar.Texture-wise I'm wondering if it has anything to do with the creamer I used.

Black Bean Brownies

Several people I know would never consider giving these a 5-star rating, just because of the black beans. I did not use instant coffee and was able to taste a hint of black beans. For me, the health-woman, I found them to be the best brownies EVER. I loved the texture. Other people, those who would give an honest opinion, said "these are weird, why does it have this texture?" As for me-- my new favorite brownie. Update: people love these! It tends to be the people who enjoy being healthy & like the taste of "healthy." I don't think I'll ever make brownies with flour again!

Chewy Caramel

This probably deserves more than 3 stars, but I had a disaster. I must have boiled the ingredients too long, even though I followed reviewers advice of "about 20 minutes" (I have no candy thermometer.) I ended up with the texture of sugar daddy suckers-- aka WAY too hard of caramel. I wasn't able to cut through it, so microwaved it with plenty of non-dairy creamer and was able to make a sauce to go in brownies. Scared to try this again, but if I do succeed next time, the rating will go up.

Cranberry Macadamia Bark

So easy, so quick. I should've halved more of the macademias-- the one's I didn't fell off the bark since I sprinkled the nuts & cranberries post melting the chocolate. Am sending to Africa, hope it makes it in the same condition by Easter!

Steff's Shepherd Pie

I didn't use cream of mushroom soup, and used ground turkey rather than beef. Also used onion powder (along with garlic and pepper) to season the meat. I flavored my mashed potatoes with hot curry powder-- YUM, that added a wonderful taste (and smell!) To moisten the mashed potatoes, I made them with the appropriate amount of water and milk, then added about 1/2 C chicken broth. This counteracts the need for any creamed-soup (+ makes it dairy free and cuts the calories.)

Death by Chocolate

Awesome- I made 3 versions of this. All of them using the german chocolate cake, sugar-free cool whip, raspberries, and pero rather than coffee (works fine.) For Valentines I made one with pink/red layers by making vanilla pudding and dying it with food coloring. I made another with pink (dyed) cool whip, and lastly one just like the recipe- minus the toffee bars. All of them delicious! Think I like vanilla pudding layers best.

Vanilla Berry Parfaits

You can make this so many different ways. I had no yogurt, so I put shredded coconut on the bottom, layered with frozen (thawed) mixed berries and whipped topping, topping it off with cinnamon. I made another one using Kashi Crunch cereal in between layers- so good.

Homemade Black Bean Veggie Burgers

Best burgers on the planet. I've made these multiple times- using whole wheat ritz rather than bread crumbs, & I don't tend to use the green bell pepper. Everyone must try these! They also freeze well.

Salmon Pasta Salad

Delicious! I love anything with salmon. Made mine with whole grain penne pasta, and the flavor is great, although it seems like something is missing, I just can't put my finger on it. I'll be experimenting before serving this, might just add cayenne to give it a kick. I also added cilantro and a bit of parsley. Made mine with regular tomatoes and diced the areas with the least amount of juice- worked just fine.

Crab Dip

I used 8oz. vegan cream cheese and light miracle whip. Also added 1/4 C sour cream to have the dip-- definitely better than the other half. (Cayenne also helps the flavor.) I prefer this chilled. Great with whole wheat ritz!
