Sausage-Potato Casserole

The sausage and potatoes cooked and tasted fine, but cheddar cheese just doesn't hold together well when cooked this way -- I should have realized before I even started. This wasn't so much a casserole as some hot dogs, potatoes, and separated cheese.

Chicken and Broccoli Pasta

I didn't think this dish worked, and it wasn't just a matter of little flavor (although that was part of it), but the ingredients just didn't blend together well. I may as well have put the broccoli and chicken on the side -- and then cooked the chicken some other way because IMO, that was the blandest part of the dish. The sauce itself was just a very basic tomato sauce. I spiced it the way I normally spice my tomato sauces and it tasted fine, but it still didn't help with the chicken and broccoli.

Butter Bean Burgers

My whole family enjoyed these, even my 2-year-old. They're a little different for us because we're not vegetarians, but we do like to keep things interesting at the dinner table and this fit the bill. We'll be making these again!

Rice with Almonds and Raisins

I loved this recipe. The raisins and almonds make the rice a little sweet, which was perfect for me. I gave it 4 stars because my husband only thought it was good, not great. He doesn't have my sweet tooth.

Blueberry Drop Cookies

Wonderful cookies that are sort of a cross between a cookie and a muffin. One suggestion...refrigerate overnight. The first time we made these we refrigerated overnight and they turned out wonderful. The second time we started them in the morning and baked in the early afternoon, letting the dough sit for about 4 hours like the recipe said. They didn't come out quite as good....still good but a little soggy. I plan to make these again and prepare the dough the night before.

Penne Pasta with Spinach and Bacon

This was very good...easy, quick, flavorful! I gave it a 4 because I plan to make 2 changes next time...first, I plan to drain off some of the bacon grease before adding the garlic. Second, I plan to add onions. But otherwise, this was a family hit!

Chicken Salad on a Tortilla

I was very indifferent about this. It's not bad, not great...just a salad on a tortilla. I might make this again if I add some Mexican spices to the chicken, but that will make it awfully close to the chicken tacos I've made for years.

Grilled Brown Sugar Pork Chops

These came out pretty good, although I had trouble getting the sauce to thicken. I added an extra tablespoon of corn starch before I was done. The flavor was great and we'll use this again.

Fabulous Homemade Bread

This bread fell while baking. I've been baking breads for about 2 years now and while not every loaf has turned out perfectly, I've never had a loaf come out of the oven shorter than when I put it in.

Amish White Bread

Easy and quite yummy as is. I don't think it's anything other than it claims to be -- a basic white bread that each baker can tweak to his or her own tastes. ETA: The second time I made this I did some experimenting. Instead of cutting the amount of sugar, I used 2 tablespoons of sugar to proof the yeast and then replaced the rest of the sugar with 1/2 cup of honey, which I added with the other ingredients. The honey adds flavor and reduces that over-sugared flavor.

Angel Chicken Pasta

We'll make this one again! I love the smell and taste of wine in cooking...so flavorful! I didn't have cream cheese with chives so I used regular and it didn't seem to matter. I don't really think this recipe needs modifications, I thought it was quite good as is. I may try mushrooms next time just because I like them and it would work in this dish.

Gary's Turkey Burritos

I've made these several times now. The whole family loves them. We add a few Mexican spices to the turkey (not too much because we have a toddler). I really like the texture of the corn and refried beans. (On a side note, I used regular refried beans. There is almost no fat in them anyway -- half a gram per serving. There is no calorie difference at all between fat free and regular refried beans. I didn't really see the point of making a low fat version.)
